Bonjour!
Great recipe I tried this morning: Ingredients listed for 3 waffles. Double it (except the egg) and you get 3 servings.
1 cup frozen strawberry or sliced fresh
1/2 cup cornmeal (blue if you have, for even more dramatic color)
2 tbsp whole wheat flour (that the 1 point I count that isn't core)
Some splenda (1/2 tbsp?)
1/2 teaspoon baking soda
1/4 tsp salt
1 tbsp canola oil
1 egg
Puree the strawberries in a food processor until smooth and soupy. Add the remaining ingredients and process to just mix.
Preheat waffle iron and cook the waffles. The waffle brown quickly so watch carefully not to overcook (for me number 4 on my waffle machine). Serve hot with sugar free syrup (Howards').
Miam miam (that's yummy in French:p )
Tomorrow I may try it with ground oatmeal instead of the whole wheat flour to make it 100% core. I'll let you know how it turned out.
