Smokey Orange Barbeque Sauce
Mist of olive or macadamia nut oil
1 small onion, chopped
3 chipotle peppers (smoky hot peppers) in adobo sauce
½ cup ketchup*
¼ cup orange juice concentrate 4
Zest of 1 orange
¾ cup low-sodium, fat-free chicken broth
Place a small saucepan over moderate heat. Mist with oil and add onion. Sauté onion for 3 to 5 minutes or until onions are translucent. Combine chipotle peppers, ketchup, orange juice concentrate, orange zest and chicken broth in a blender. Blend on high until sauce is smooth. Pour sauce into saucepan with onion and heat to a bubble. Lower heat to simmer until mixture is reduced to sauce consistency – about 10 minutes.
Makes approximately 8 (2-tbsp) servings of sauce @ 1 ½ points each
