Hi everyone,
I just discovered the greatest breakfast! I found it in a fitness magazine, and now I'm hooked: Eggwhite/oatmeal pancakes = 3 pts
-3 eggwhites
-30 g plain, large grain oatmeal (I had 1/2 cup of extra-fibre all-bran = 0pts) =
-cinnamon
-splenda
-sugar-free syrup
-(any fruit for 1 more pt - bananas are great here!)
-cover the oatmeal (and any fruit) in a little water and micro for 1.5 min, just to get oats wet
-mix eggwhites into oatmeal till combined, add cinnamon and splenda to taste
-pour into a sprayed frypan (or you can micro till cooked), and flatten. Cook one side for a few min, turn over and cook other side.
-Enjoy with some sugar-free syrup!!!
SOOO yummy! So HEALTHY!!

what does 30 g. oatmeal equal? Is it 1/2 *. like the bran cereal? Thanks. T This recipe sounds great.

Apples sound good, too!

well - I buy a big bag of large oats, so I'm not sure how much it is when measured in cups. Follow the getting-started guide and use 2 pts worth of oatmeal to get the same number of pts. I''m off to have my yummy pancakes now!

I had this this morning and it was delicious! TODAY I made it with "cooked oatmeal" (1/2 *.) and it was great! Custard-y and good...I put the cooked Cinammon Apple on top~ (Put 1 peeled/sliced apple in a bowl; sprinkle generously with cinammon and some drops of pure vanilla extract. Cover with a plastic wrap and cook on "high" in the micro for 1 1/2-2 minutes.) Mine come out "syrup-y"! :D

Next I will make this with my "Toasted Quick Oats" from Safeway, uncooked. I'll measure out 30 g. and let you know the measurement, WWBabe.

sounds delicious! I eat them every single morning. I'm going to try them with bananas tomorrow - its such a great way to get in healthy protein and carbs - a perfect way to start the day! Let me know if you have any other variations.

30 g is one ounce. Just weigh it out.

Second time I still used the "cooked oatmeal" (1/2 cup), but this time added bananas and cinammon...Topped with DV SF Caramel syrup...OH MY GOSH!

I got hints of: French toast/Dutch baby pancake/ and Bananas Foster! :angel

Mmmm-mmmm~ :D

OH MY GOSH!! I tried Bananas today and WOW... I can't believe its only 4 pts for a wildly delicious, super healthy breakfast. It tastes like such an indulgence! I cooked the bananas with the oatmeal before mixing with the eggwhites. It was to die for!!
I just can't get my pancakes to stay in a 'pancake' shape. Are you doing it in a frypan or a microwave? I sort of ate it as mush today - but it was still absolutely delicious. What should I make it with tomorrow??

Mine has made a "pancake" that fills the whole omelette pan! :eek:

So I've had trouble "flipping" it. :rolleyes:

You do have to wait until the top start to bubble and turn white (showing it's set). I'm thinking that "dollar-sized pancakes" might work the best?... :)

I've got to go with banana again today...! :D

SO - I tried something new - another AMAZING oatmeal breakfast. I combined by 1/2 cup oatmeal with a cup of pumpkin (total =3 pts), added some splenda, cinnamon, nutmeg, and ginger (can use pumpkin pie spice too!) - huge breakfast for only 3 pts. I'm thinking of trying to combine my eggwhites in too and make pancakes out of these tomorrow for just 1 more pt. Its a lot of batter, so I have a feeling it will make a half dozen or so mini pancakes (for only 4 pts!!!!). I'll let you know how it goes.

This is a wonderful and popular creation--you may also try adding a packet of SF/FF cocoa along with the pumpkin and spices--adds a calcium serving!
