This was posted by LauraH on a recipe thread in the 100+ forum. I wanted to post it here so I can find it more easily.
Blueberry bread pudding
2 slices diet whole wheat bread
1/2 cup blueberries
1/4 cup splenda
1/4 cu[ egg substitute
1/2 Cup skim or lowfat milk
1/2 tsp vanilla
1/2 tsp cinnamon
Crumble bread in small casserole dish that has been sprayed with Pam.
Mix remaining ingredients and pour over bread. Bake at 375 for 30-35 minutes.
Makes 1 serving @ 4 pts
I use 2 slices for 1 pt bread so it comes out to only 3 POINTS per recipe! :D
I've made this with both blueberries and bananas and they were both AWESOME! You just need to adjust the points depending on what/how much fruit you use.

I have to post this. I just tried the blueberry bread pudding for breakfast this morning and I have to say it was the best thing I've had in a looonng time! I couldn't believe how tasty it was. My DH and DS finished it off! I would imagine you could substitute the blueberries for any kind of fruit. I think I'll try peaches next!! mmmmmmm mmmmmmmm good!! Thank you so much!

Dawna, I made it with frozen berries and it was awesome! I did not thaw them before cooking and it turned out great. I've now tried this with frozen blueberries, fresh bananas and frozen peaches. All were really delicious but bananas are still my favorite. I'm going to try it with frozen sweet cherries later this week. Yum!

I made this tonight, and WOW! DH & I loved it. I doubled the recipe for one and made enough for two. I was pretty full after eating my delicious bulgar dish, so I just ate a small portion of it. DH finished off the rest, and he is already asking for it again.
BTW, the frozen blueberries worked out fine.

I made this for breakfast today & really enjoyed it! I used frozen blueberries. I think I'll try banana tomorrow. I found it very filling too, which is a huge plus for me with a breakfast. Thanks a bunch!

OMG! I just made a variation of this recipe using
2 slices lite multigrain bread (1)
130g frozen dark sweet cherries chopped (1)
1/4 cup egg substitute (.5)
1/2 cup skim or lowfat milk (1)
2 TBS Almond Davinci SF Syrup
2 TBS Splenda
It is soooo yummy and huge serving for 3.5 points.
I sprayed on a little ICBINB for the extra .5 point. It is perfect for this cold, dreary day.

I made this this morning, but instead of blueberries I used banana. I used half a banana and sliced it and made it that way. I wasn't sure if I was supposed to mash the banana or slice it but it came out good the way I did it. I think I will try a different fruit or berry next time. Thanks!

Made this recipe this morning for breakfast. DH and I split the huge portion in half. He loved it! I followed the recipe as it was originally posted. So, I counted only 2 points instead of 4 points. Is this correct? This is so good. I was going to make Monimac's pancakes but didn't have any applesauce & had been wanting to make this so I did. I've wanted it for breakfast but I'm not the kind to wake up & make something & have to wait for it to cook & cool down, etc. I usually eat right away (well, after the animals & Granddaughter). I'll have to make a couple batches of this next time & save some for the morning. BTW, I made the original recipe posted by Joanne, and am also going to experiment with different fruits. I'd also like to make a larger batch in a cake pan but I'm not real good converting recipes, especially going from a single serve to a big pan.

I made this for breakfast this morning, using the banana. It was very good and filling. I think I'll try a combination of the blueberries and bananas next time. ;-)

I made this for DF and myself last night as a dessert and we both loved it! My question is what type of pan do you use to make this? I used a 9x9 and it was a little thin...I guess I could have doubled the recipe but I really want to make this for myself as a breakfast. Thanks! :)

I made mine ina 9x9 pan the first time. The next time, I doubled the recipe and used a 13x9 pan. It was better the second time. :)

I'm disappointed, mine turned out dry. When I poured the wet ingredients over the bread I knew it wasn't enough to cover it.
Anyone else had this problem?

The light bread is only 1 point for 2 slices. The rest of the ingredients are core, aren't they?

you are right. that is low point for breakfast. I have really stayed away from bread since starting core, but I can do it once in awhile.

I am baking this right now. It sounded wonderful and everyone had great comments on it. I forget to put in the Davinci syrup though! I will definitely try it again. I think you could bake it the night before and have it ready for breakfast in the morning. I made this with fresh strawberries, and 1 tablespoon of Sunkist Toffee Glazed Almonds (for 1 extra point) this morning, since I did not have the almond-flavored Davinci syrup, and it was truly YUMMY! :D

there was some talk of watery pudding...I tried putting my blueberries on top of the bread, not mixing them in, so that they were sticking partly out of the pudding on top, and it was NOT watery at all...God is good, it was perfect!

I don't want to rain on anyone's parade, but I just put the ingredients into Mastercook, and it came out at 224 calories, 2 grams of fat, and 7 grams of fiber, which makes it 4 points (because of the fiber cap).
It's in my oven as we speak. I'm very excited (even if it's 4 points!)

Blueberry Syrup
Take 1 cup of frozen blueberries - set aside
Put in 1 cup of water in a saucepan, 1/2 cup splenda and 1/4 cup cornstarch ,stir...add blueberries. cook for 7-8 minutes stirring constantly until the blueberries begin to pop!
It is a very low points syrup!

Ok. I must have done something wrong. I followed the original recipe at the top of the thread and used frozen/mixed berries. The texture was great but it had a sacherine (sp?) type after taste. Any ideas???

I actually made some of this for myself yesterday....W O N D E R F U L!!! Being the baker that I am, I had to "make it my own" by pumping up some of the flavor....I added 1/2 tsp. NUTMEG & 1/4 tsp lemon peel....BAM!!:headover: I ate the whole thing...IT WAS AWESOME!!! Might make another "batch" tonight just to watch Grey's Anatomy!!! Next week I intend to do a blueberry/peach combination...my two favorite fruits! Never thought about microwave or crock pot?? If anyone tries it please post!

I have never made it in the microwave, but I doubt I would like it that way. One of the things I love about this dish is that it get's crusty on top (and some on the bottom too if you bake it longer). The egg/bread puffs up some in the oven and gives a wonderful texture you might lose in the microwave. But..you could try it and see how it goes.

The whole thing is one serving. It's 3 points for the whole thing if you use light bread.

This is by far, my favorite dessert! And its HUGE. I can hardly believe I get to eat the whole thing myself for only 3 pts.
I tried it with a banana last nite but not so good! I'll stick with the blueberries or maybe try Strawberries.
I cook mine in a toaster oven.

I made Raisin Bread Pudding today for only 2 points.
I found some 2 slices for 1 point light raisin bread at Kroger.
I used 1/4 cup of egg beaters and reduced the milk to 1/4 cup because in the past this recipe has been too "wet" for me. I added a few packets of splenda and some cinnamon and vanilla. It was pretty good. Not awesome but a nice big 2 point snack.

I don't know. I've never tried it. If you used a whole egg it would add a point, but I'm pretty sure that the recipe would work. I just don't know how just egg whites would be. You might need to yolk to make it "pudding".

Well I tried it last night with 1 whole egg and 1 egg white...DELISH!!! I'm hooked!! Can't wait to experiment with other varieties. I tried it with frozen blueberries...YUM!!! I was surprised at how large and filling a serving is...definately not feeling deprived after that dessert!

I almost made it with apples when I did the cinnamon raisin bread but decided to leave the fruit out to save a point since it was a snack instead of breakfast. I think I'm going to try it. I guess it would depend on how big your apple was. I would probably use a small apple and be ok. Now yall are making me hungry. :crazy:

This is one of my favorite recipes! I tried it with apples but they were still somewhat crunchy...next time I'll nuke the apple pieces before I put them in to pre-cook them alittle...the taste was yummy though

Mine is in the oven right now.
I used frozen mixed berries instead of blueberries because that's what I had on hand, and one whole egg because I didn't have egg substitute.
I hope it's as good as everyone says!

It was really pretty good. I'm not usually a fan of normal bread puddings that have raisins and are goopy, but this one was moist but still had a nice browned top. I put it in a glass pie plate, so it was thin. I just scooped it all out into a bowl. If I have extra bread to use up that I don't want to make sandwiches with, I'll try this again.

This was very good, but a little too sweet for me. I'm not sure if that was because I had more than my usual can of diet Mt Dew today or not. DD even ate a 1/4 of it (with blueberry smudges all over her face ~ my heart stopped until I could wash it off with Easter tomorrow!). I put 1/2 in the fridge to try tomorrow to see if it was the all the extra artificial sweetner I had today.
I also used a whole egg. I didn't have any Eggbeaters on hand and didn't want to buy a carton if I didn't care for it.

I made a double batch and ate half the next day. It's good.
I cooked mine with the convection oven, so it was a little more like a cobbler the first day and more like a bread pudding the second day. I liked them both.

Oh, all I can say is.... WOW!!! Thanks so much for this recipe. I had some frozen blueberries and couldn't decide what to do with them, so I made this last Saturday. It was awesome! I liked it so much that I made it again on Sunday.

Just ate some I made this morning it was yum!
Instead of using the 1/2 milk, I used 1/4 cup soy milk 1/4 water. I don't think it changed it much it was delicious.
Maybe not just as rich.

I made this today with a very stout whole grain bread, cherries and sliced almonds. It cost me 6 points but it was a good and very filling breakfast. The more dense bread was worth the extra points for the texture, IMO. I rarely eat the "light" bread anymore so I'm glad I found a way to have this recipe again.

I must say that the almonds are a great addition. I have started keeping a small bag of slivered almonds in my freezer and adding a Tbsp to the top before cooking.
I make mine with blueberries and SF Amaretto syrup and cook it while I walk on the treadmill on weekend mornings. Mmmmmmmmm...... I wish it was the weekend now!! :bcb_bigsm

I made this again this morning! It is awesome! I make a double batch in a stoneware loaf pan so DH and I can have a hot breakfast together. I use bananas, cinnamon, and DVSF toffee. I also toast my double fiber bread before slicing it. It doesn't seem as gooey when I do it that way. This is a definate keeper recipe. Try it if you are thinking about it! It is awesome!:bcb_bravo

I just tried this recipe this morning. It was wonderful. I didn't have any of the 2slices for 1pt bread because I forgot to get any at the store yesterday so I used an arnold thin. It still turned out good and saved me that extra point. I will def try this again. Yummy!! I liked the idea of the loaf pan so that it wouldn't be so thin. :bcb_up I will try that next time.

I love this recipe and so does DH, so I usually double the recipe. Last night I made it with apples. I diced the apples and put them in a skillet with a little water to help soften. I added some of the splenda directly to the apples,(left some splenda and added to the wet ingredients) and added cinnamon. After I put my bread in the casserole dish, I added the apples and additional cinnamon and topped with the wet ingredients. It was excellent, and the apples were just right. :bcb_happy
