Since I'm trying to lower my carbs I've been enjoying this for breakfast. It's good with DV syrup or sugar-free pancake syrup. It also makes a great dessert. You could sautee fruit and makes crepes!

Faux French Toast
Servings: 2

1 egg
4 egg whites
1/4 cup fat-free ricotta cheese
1/2 teaspoon vanilla extract
1 teaspoon Splenda -- granular
1/8 teaspoon ground cinnamon

Combine all the ingredients thoroughly and pour like pancakes on a hot skillet. Makes 2 servings.

Per Serving: 76 Calories; 2g Fat (1g saturated fat); 11g Protein; 2g Carbohydrate; trace Dietary Fiber; 95mg Cholesterol; 152mg Sodium. Exchanges: 0 Grain(Starch); 1 1/2 Lean Meat; 0 Fat; 0 Other Carbohydrates.

Would that be a "1/4 Cup " of FF Ricotta ?? Just curious. This way I don't make any mistakes. Plus, the point value for the two pcs. Thanks.

Yes, that's 1/4 cup. I've corrected the recipe. The recipe makes 2 servings and each serving is 2 points.

I made these today using homemade soy yogurt cheese and powdered stevia. Very good. They were more like crepes and the recipe made 6 of them.

Per crepe: 30 Calories; 1g Fat (30.5% calories from fat); 4g Protein; 1g Carbohydrate; trace Dietary Fiber; 31mg Cholesterol; 48mg Sodium. Exchanges: 0 Grain(Starch); 1/2 Lean Meat; 0 Fat.
