This makes a TON and is wonderful! We were using the Hodgson Mill Insta-Bake Mix, loving it, but it was sooooooo expensive. This is a wonderful alternative! Definitely find the buckwheat flour. Hope you love this, too!

"LeAnne's Terrific Waffle/Pancake Mix"

8 cups flour (if you'd like an all whole wheat mix, use Whole Wheat Pastry Flour; WWCarol: we use the WW pastry flour...it's great!)
2 cups whole wheat flour
1 1/2 cups buckwheat flour (at health food stores, grocery stores; WWCarol: I found Bob's Red Mill)
1/2 cup cornmeal, stoneground
1 1/2 cup oatmeal (blend in your blender til powdered)
2 cups buttermilk powder (in the baking section of your market)
5 TBS. baking powder (WWCarol: I use Rumford's)
2 TBS. baking soda
1 cup sugar (I use sucanat natural sugar from a health food store or co-op, WWCarol: me, too)
2 TBS. salt

This will make 4 quarts. Mix all together in a very large bowl. You can divvy it up into gallon sized freezer storage bags. (me: I put it in a large covered plastic container) You can keep it in the freezer or the pantry. (me: It depends on how long it takes you to go through this! We go through ours quickly because of DH!)

To make pancakes or waffles:
1 cup mix
1 egg
1/2 to 2/3 cup water (start with the lesser amount and add, if necessary)
2 TBS. vegetable oil (me: I use soybean or olive)

In a medium bowl, stir mix with water, egg, and oil. Heat your griddle and make pancakes as usual. For waffles, double the batter and follow directions for your iron.

Carol,

What is the difference between Whole Wheat Pastry flour and WW flour? Also, it is 10 cups total of these (8 pastry and 2 ww flour)?

I can't wait to try these! But I need to get the pastry flour first.

I ran this through MC with a few assumptions.

I used flour, because my MC doesn't have whole wheat pastry flour as an ingredient, and I don't have any to use to add it.

I figured you get 16 cups of pancake mix.

I figured you'd get 6 pancakes per cup of mix, using the 2nd recipe. (This is similar to my pancakes, it's a med. sized pancake made with approx. 1/4 c. mixture).

And the results are (per pancake): 129 cal., 1 g. fiber, 6 g. fat, 3 points.

If you omit the oil (I always do for pancakes): 89 cal., 1 g. fiber, 1 g. fat, 2 points.

Here's what my Bob's Red Mill Whole Wheat Pastry Flour says:

Serving size: 1/4 cup, dry (30 g.)
Servings per container: 75 (5 lbs.)
Amount per serving:
Calories, 110; Total fat, .5 g.; Total carbohydrate, 23 g.; dietary fiber, 4 g.; protein, 3 g. (Everything else is zero.)

Here's what it says, Maureen: "My finely ground 100% whole wheat pastry is milled from U.S. Number 1 premium soft white wheat. For maximum nutrition, rich flavor and high fiber use it in place of white flour for cookies, muffins, pancakes, cakes, pie crusts and in any recipe calling for baking powder or soda as a rising agent." I should add, we do keep this mix in the refrigerator, even though DH goes through it rather quickly~ :)

We love pancakes and waffles around this house! I am always tinkering with recipes for them and this one sounds great! I'll give it a try this weekend. Thanks!!
