Happy 4th. everyone, I made this for dinner last night. Wow! It was superb...keep in mind I love anything cucumber, but DH doesn't, and he thought this really hit the spot!
The recipe originally called for nonfat sourcream or plain or vanilla yogurt. I don't have too much luck here with anything made with yogurt (no one here likes yogurt), and I decided to use the low-fat sourcream since the points in the recipe were so low.
This was absolutely perfect for the sizzling weather here. Very refreshing & filling.

Creamy Cucumber Soup

1/2 cup sour cream, light
1 cup cucumber* -- peeled & cut into pieces
1 tablespoon onion -- heaping
1/2 cup ice cubes
In the Vita-Mix, Place all ingreds. in the VM in the order listed.
Secure 2-part lid.
Select variable speed #1.
Turn on machine and quickly increase speed to #10, then to high.
Run for 1 - 1 1/2 mins., until smooth.
Serve immediately
