On another thread (I can't find it) people talked about freezing tomatoes for use later. I did 4 so far but how come you don't see it in the stores? Can you really freeze tomatoes? :confused:

I just toss on a cookie sheet and freeze. To be tossed in soups and stews later. I do not do anything iwht the skin, just toss tomatoes into soups.
I have no idea why they are not sold frozen, think of the sodium in our diests saved if we ate fresh frozen tomatoes insteat of canned!!!

What I loved about freezing them was when I ran one under hot water the skin peeled right off! :D

I also left the skins on but I'm happy to hear they come off easy.
How about freezing hot peppers? ;) . Thats next or pickled

Cheryl, I not only did hot peppers but squash, zucchini, & asparagus for my stir-fries! And I do bell peppers all the time. I put just enough in a zip-lock bag to add to my mixtures.
I use a straw to suck all the air out of the bag's so they don't get freezer burned [after they are full of course] graemlins/clown.gif ! ;)
