I've got a recipe for a polenta tart that sounds delicious. The only problem is that it calls for either a tart pan with a removable bottom or a springform pan. What are these? Are they necessary? Could I use a pie plate instead?

I think you could use a pie plate but it would be a tart. ;)
Tart pans are fairly inexpensive and really easy to use... plus they use make a really lovely tart. You can see one here --- Tart Plate (http://www.amazon.com/exec/obidos/tg/detail/-/B00004RFPV/002-5903718-0889633?v=glance).

Tart pan? Is that a cooking vessel that belongs to a strumpet? ;)
You may want to give a fairly substantial spray of Pam in whatever pan you choose though. I'll bet the sticky factor is why the recipe calls for a springform or shallow pan.
