Hi Buddies. We have a Court of Honor for our Boy Scouts this Sunday (9/7/03) and we are going to have a pot luck dinner. I have one boy scout who is a little overweight and his Dad told me that he's got him on Weight Watchers and is making him count points.

I want to make a casserole for the dinner that he can eat and that the other boys might like as well (I'm sure he doesn't want it to be obvious that he has to count his points). Any good suggestions?

How about the Impossible Taco Pie? Both of my kids enjoyed it (13 & 10) and it's an easy recipe. Check for it under the pork or beef entrees - I bumped it up for you.

Thanks buds.

All good ideas. I did see the recipe for the Impossible Taco Pie - I think I'm going to try that one at home sometime real soon. I'm thinking of either doing that or the Baked Tortilla Casserole on that same site. I think both would work.

Cathy, I looked back a year and couldn't find the Crockpot Lasagna. Can you send it to me? Thanks. graemlins/wave.gif
