Does anyone know the basic ingredients for cucumber and onion slices. We want to make it tonight but I forgot how much water, vinegar and sugar to add or spenda. Any help is appreciated. graemlins/crazy.gif

This is the recipe I use, and my family loves. I don't know how much Splenda you would substitute for the sugar if you preferred, but maybe someone else does.

Cucumber and Onion Salad

3 medium cucumbers
1 large onion
1 C. white vinegar
1/4 C. water
4 T. sugar
1/2 t. salt
plenty of fresh ground pepper

Peel and slice cucumbers paper thin, place in paper towel and squeeze dry.
Slice onion into very thin rings and combine with cucumbers in a bowl.
Mix the remaining ingredients and pour over vegetables. Marinate 3 hours. Serve very cold.

I go a little easy on the onion, and try to use a mild onion such as Vidalia, due to family preference.

Here's one, omitting the water and salt, I cut from the Buffalo News, but haven't tried yet:

Nana's Cucumbers

3 large cucumbers, peeled and sliced very thin.
2/3 C white vinegar
3 t. sugar
1 large white onion, cut into rings
Coarsely ground black pepper

Place cucumbers in a strainer, cover with plastic wrap and place over a bowl. Set a heavy can over cucumbers over the wrap. Let stand for 2 hours or so. Pour off the drained liquid and place cucumbers in serving bowl. Add onion. Dissolve sugar in vinegar and pour over cucumbers and onions. Grind black pepper over all and chill. Serve very cold. 6 servings.

well I tried this with some modifications---- Yummy low point salad

1) I added 1 c ultra low fat miricle whip 5 pts
2)I added some dill
3) I used spleda equal portions of sugar replaced

Next time I think I would use 2 onions otherwise it was a great summer salad

This is sooooooooo good.....It is better after it sits overnight, makes it good and crunchy the next day.....I am the only one who will eat cucumbers here so I have it modified for a smaller serving:

1 cucumber sliced thin(peeled)
3 tablespoons sugar
1/3 cup vinegar
1 teaspoon salt
1 small sweet onion..I prefer Valdalia
Mix sugar, vinegar and salt...add cucumbers and onion.
Put in a jar or plastic container...press cucumbers(to get a little of the juice out)..Refrigerate for at least 4 hours... preferbably overnight.....

I make this with seasoned rice vinegar which is 20 calories per 2 T. Then I just add a little pepper. It is zero points and I can eat my way through a very large container in a week. I often take it to work for part of my lunch. In fact, I wish I had made some yesterday--now there's a task for today sometime.
