actually I found a chili recipe thats very close to what I used to make on Aimee's site smile.gif THanks though! I keep a couple versions of various things anyway in my recipe book!

This Chili Recipe is from the "Weight Watchers New Complete Cookbook. My family really liked it and you get a lot in each serving.
Beef & Bean Chili
Makes 4 servings
4 teaspoons olive oil
2 onions, chopped
1/2 carrot, chopped
1/2 celery stalk, chopped
1/4 cup green bell peppers, seeded and chopped
3-4 garlic cloves, minced
1 teaspoon minced deveined seeded jalapeno pepper.( i used the dry powder)
3/4 pound lean ground beef (10% or less fat)
1 tablespoon chili powder
2 teaspoon ground cumin
1 teaspoon dried oregano leaves
1/2 teaspoon ground coriander
One 14 1/2 ounce can diced tomatoes
One 16 ounce can pinto or red kidney beans rinsed and drained
1/2 teaspoon salt
Pinch freshly ground pepper
1/4 cup chopped fresh cilantro ( I used the dry powder)
1/4 cup nonfat sour cream
1/4 cup chopped red onion
1. In a large nonstick Dutch oven or saucepan heat the oil. Saute the onions, carrot, celery, bell pepper, garlic and jalapeno until the onions are translucent, about 15 minutes. Add the beef and cook, breaking it apart with a wooden spoon , until no longer pink, 5-7 minutes. stir in the chilli powder, cumin, oregano and coriander, cook stiring 1 minute.
2. Add the tomatoes, beans, salt and pepper; bring to a boil. Reduce the heat and simmer gently, particually covered, stirring occasionally, until the flavors are blended about 20 minutes. Stir in the cilantro. Serve, topped with the sour cream, red onion and some additional chopped cilantro if you like.
PER SERVING: 402 caleries, 12g total fat, 4 g Saturated Fat, 44 mg cholesterol, 700 mg sodium, 49 g total carbohydrate 15 g dietary fiber, 27 g protein, 171 mg calcium. POINTS: per serving 8.
