I am looking for a low fat pie crust recipe not only for fruit pies, but for my delicious tomato pie. I have found ways to lighten the rest of the ingredients, but the crust still is responsible for a lot of points. If anyone has a successful recipe, please let me know.....THANKS!!

Hi Desertrose,
This may not be what you're looking for, but I make my pies (sweet and savory) without a crust.
If you do want a crust, here is a versatile oat crust from Cooking Light.
6 servings = 2 points
8 servings = 1 point.
To make it sweet, add sweetener of choice.
Oat Crust
1 cup rolled oats
1/3 cup oat bran
2 tablespoons chilled butter cut into small pieces
3 tablespoons cold water
pan spray
Preheat oven to 375F.
To prepare crust, combine oats and oat bran; cut in butter with a pastry blender
or 2 knives until mixture resembles coarse meal. Add water; stir just until moist.
Press mixture gently into a ball on wax paper, and cover with additional wax
paper. Roll dough, still covered, into a 10-inch circle.
Remove 1 sheet of wax paper, and fit dough into a 9-inch pie plate coated
with spray.
Remove top sheet of wax paper. Bake at 375F for 7 minutes.
Cool on a wire rack.

I use the large whole wheat soft torillas. It works wonderfully, and fits into a pie plate perfectly. I started doing this as I love fruit pies. Works well for pumpkin as well.

Thank you SO much for both of these ideas! I miss fruit pies cause I haven't wanted to use all those points--even the sugar-free pies at Kroger have a lot of points in one piece because they're not low fat. Now I can have my pie again! :D

There is another recipe posted on the Desserts board that I have used before which is quite good also with very few ingredients. I wish I know how to post a link for you, but I don't. So if you set your dater back to November 15, 2002, it's listed under PIE CRUST!!! by jjimeg (I think). I hate to miss giving credit where credit is due, but I'm sure you'll see it. It's really quite good. I'll be using it again when I need to bake a pie. :D

I saw this posted somewhere in BCB but I wrote it down cause I want to bake a pie myself. But the crusts are lots points.........this should help.
1 Point Pie Crust
3/4 Cup Flour
3 Tablespoons Soft, Whipped Diet Margarine
(tub style)
3 Tablespoons powdered Sugar
Spray 9" pie plate with Pam. Mix all the
ingredients with a fork and press into
pie plate. Bake crust at 350o till its
golden brown for 10-14 minutes. Cool
crust 10-15 minutes before filling it !!
1/6 of Pie Crust = 1 Point :D
