This is a very easy recipe to make subsitutions to. Try different dressings or other spices to change the flavor.
1 pound flounder, sole or orange roughy fillets
1/3 c finely crushed reduced fat cheese crackers (like cheez-it)
1 tsp dried parsley flakes
3 tbsp FF french dressing or plain yogurt
Heat oven to 450°. Spray cookie sheet with cooking spray. If fish fillets are large, cut into 4 serving pieces. Mix the crachers and parsley. Brush both sides of fish with dressing; coat one side with cracker mixture. Place fish, cracker side up, on cookie sheet. Bake uncovered 10 to 15 minutes or until fish flakes easily with fork.
This recipe is very good with dill and FF plain yougurt over salmon.
