Scallop Thermidor

1 lb scallops
1/2 c mushrooms -- sliced
6 tbsp light whipped butter -- divided
1/4 c flour
1 tsp salt
1/2 tsp mustard powder
dash cayenne pepper
2 cups skim milk
2 tbsp parsley -- chopped
3 tbsp Parmesan cheese -- grated
paprika

Preheat oven to 400 degrees F.

Panfry scallops in 3 Tbsp. butter until brown (approximately 5 minutes). Saute mushrooms in remaining butter for 5 minutes. Blend in flour and seasonings. Add milk gradually and cook until thick, stirring constantly. Add scallops and parsley. Spray four individual dishes with cooking spray. Divide scallop mixture into all four dishes. Sprinkle with cheese and paprika.

Bake 10-15 minutes, or until cheese browns.

Scallops on sale, going to try this soon. Sounds fantastic so I'm bumping it up.

Thanks Linda! This recipe was delicious. The second time I made it I substituted monk fish for the scallops. That was a keeper too! Thanks again! MT
