Another white fish, such as sea bass, snapper or monkfish can be substituted for the halibut (I used Talapia)
1/2 cup pineapple juice
3 tablespoons low-sodium teriyaki sauce
1 tablespoon honey
3/4 teaspoon cornstarch
1/4 teaspoon garlic powder
1/8 teaspoon ground red pepper
2 tablespoons seasoned breadcrumbs
4 (6-ounce) halibut fillets, skinned
1 tablespoon vegetable oil
1. Combine first 6 ingredients in a small bowl, stirring well with a whisk. Combine breadcrumbs and fish in a large zip-top plastic bag. Seal and shake to coat.
2. Heat oil in a large nonstick skillet over medium heat. Add fish; cook 4 minutes on each side or until fish flakes easily when tested with a fork. Remove fish from skillet; keep warm.
3. Add teriyaki mixture to skillet. Bring to a boil; cook 1 minute, stirring constantly. Pour over fish.
Yield: 4 servings (serving size; 1 fillet and 2 tablespoons sauce).
