Linguine with Salmon and Lemon Sauce

8 ounces spinach linguine
2 tablespoons olive oil
1/2 cup onion -- sliced
2 cloves garlic -- minced
1/2 teaspoon lemon peel -- grated
1/3 cup lemon juice
2 tablespoons fresh parsley -- chopped
7 3/4 ounces salmon -- (fresh or canned)
2 tablespoons Parmesan cheese -- grated

Cook pasta according to package directions. While pasta is cooking, prepare sauce.

Heat oil in a large skillet over low heat; add onion and sauté until tender. Add garlic; sauté another 2 minutes. Stir in lemon peel, lemon juice and parsley. Add salmon and carefully break up meat with a fork. Do not stir.

Toss linguine and sauce together. Sprinkle with Parmesan cheese and serve immediately.
