Florentine Salmon Bake

8 ounces canned salmon -- drained and flaked
2/3 cup lowfat cottage cheese
1 whole egg -- slightly beaten
1 packet instant chicken-flavored broth mix
1/4 cup finely chopped onion
1/4 teaspoon ground nutmeg
10 ounces frozen chopped spinach -- thawed and drained
1 pinch salt and pepper
2 1/2 ounces lowfat Swiss cheese -- shredded
1/2 ounce Parmesan cheese -- grated
Preheat oven to 350 degrees.
In a medium bowl, combine salmon, cottage cheese, egg, broth mix, onions, and nutmeg. Mix well. Spread mixture in a 6 x 10-in baking pan that has been sprayed with a nonstick cooking spray. (I use an 8" square pan.)
Spread spinach evenly over salmon mixture. Sprinkle with salt and pepper. Top with Swiss and Parmesan cheese.
Bake, uncovered, 30 minutes.
