View Full Version : Orange-spiced salmon with spaghetti squash

From Cooking Light Magazine

2 T. brown sugar
2 t. grated orange rind
1 t. chinese five spice powder (can find it as most grocery stores)
1/4 t. salt
1/4 t. pepper
3 cups cooked spaghetti squash
cooking spray

4 salmon fillets (6 oz. each)
4 t. dijon mustard


1. Preheat oven to 450
2. combine first 5 ingredients in a bowl. Combine 2 T. of mixture to squash and toss gently. Arrange squash on 11x7 baking dish coated with cooking spray. Place salmon on top of squash and brush with mustard. sprinkly remaining mixture on fish. Bake for 15 minutes or until fish flakes.
