Southwest Tuna with Black Beans

PREP: 15 min; COOK: 10 min
Makes 4 servings, about 1 cup each

A mild-flavored chili, Anaheims have a long, narrow shape with a medium green color.


1 tablespoon vegetable oil

1 small onion, chopped (1/4 cup)

1 Anaheim chili, chopped, or 1/4 cup canned chopped green chilies

1 clove garlic, crushed

1 tablespoon grated lime peel

3 tablespoons lime juice

1 medium tomato, chopped (3/4 cup)

2 cans (15 to 16 ounces each) black beans, rinsed and drained

2 cans (6 ounces each) white tuna in water, rinsed and drained

1. Heat oil in 10-inch skillet over medium heat. Cook onion, chili and garlic in oil about 2 minutes, stirring constantly, until onion is softened.

2. Stir in remaining ingredients. Cook about 5 minutes, stirring occasionally, until hot.

1 Serving: 355 calories (45 calories from fat); 5 g fat (1 g saturated); 25 mg cholesterol; 490 mg sodium; 54 g carbohydrate (14 g dietary fiber); 38 g protein.
