I think this recipe came from "Light and Tasty" I made it for Memorial Day and it was very good.

Montego Bay Chicken
1/4 C. Low Sodium Soy Sauce
1/4 C. Orange Juice
2 Tbsp. Brown Sugar
2 minced garlic cloves
1 tsp. hot pepper sauce
1 tsp. rum extract
1/4 tsp. ground ginger

4 boneless, skinless chicken breasts

Mix ingredients and marinate for at least 2 hours and grill

138 Calories
1 G. fat
27 G. protein
trace fiber

My family enjoyed this, but I think it would be better if it marinated longer than 2 hours, like maybe overnight.

This looks really good! I will definitely let it marinate overnight and I think it will be good with the mango salsa I am going to make this weekend...

I just made this for dinner and it was delish!

I marinated my chicken for 24 hours and then served it with some fresh mango salsa with a side of ff refried black beans topped with queso fresco. Yum!

I can't wait to try this one. I am trying to find a good marinade to go with some chicken that I will be serving a cous cous berry salad with. I thing this will be good.
