Makes 4 servings: 3 points per serving
2 tablespoons (1 fluid ounce) dry sherry
1 tablespoon low-sodium soy sauce
Four 3-ounce skinless boneless chicken breasts
1/2 cup low-sodium chicken broth
2 tablespoons fresh lemon juice
2 teaspoons cornstarch
2 teaspoons Asian sesame oil*
1 tablespoon chopped pared fresh ginger root
In medium bowl, combine sherry and soy sauce; add chicken, tossing to coat thoroughly. Let stand 10 minutes. In small bowl, combine broth, lemon juice and cornstarch ,
stirring until cornstarch is dissolved; set aside. In large nonstick saucepan, heat oil; add ginger root. Cook, stirring constantly, 2 minutes. Add chicken; cook 2 minutes on each side, until golden brown. Stir in broth mixture; bring liquid to a boil. Cook, stirring frequently, 1 minute, until liquid thickens slightly.
