Here is a great, quick meal.

1/2 pound extra-lean ground beef
1 med onion, chopped
1-12oz can corn, drained
1/4 tsp rosemary
1/4 tsp oregano
1/4 tsp marjoram
1/2 tsp salt
1/2 tsp black pepper
16oz tomato sauce
2-10oz cans red enchilada sauce
1 cup part skim mozzarella
1 pkg flour or corn tortillas, cut in 1" strips

Brown beef and onion. Add corn and spices. Combine sauces and pour half over meat mixture
and simmer about 5 minutes. Arrange in casserole dish sprayed with non-stick cooking spray in two
layers, tortilla strips, meat, cheese, strips, meat, add remaining sauce and top with cheese. Bake
15 to 20 minutes at 325°.
Makes 6 servings, 5 points per serving

I made this last night and it was delicious!!
My DH couldn't believe this was a "low cal" dish. Thank you for a great, easy recipe. I love Mexican food.

We had this for dinner last night. I can't believe it's only 5 points-so filling. My DH loved it too. Thanks, Cybergranny for another great recipe.

Hi Barbara - I made this tonight. We all loved it. You are right it was very filling and very quick. I had to make something really fast because at the last minute everyone had to go somewhere. Well I grabbed your recipe, put everything together as you said, and voila....another great meal!

Cybergranny: Can't wait to try this one - I love Mexican dishes. Just have to wait till it cools off a little so I can turn the oven on again!!

hi CyberG - could you run your recipe thru w/ substituting black beans for the hamburger? I often use the beans instead of beef - I'm sure I'm saving points but have never done an actual comparison to find out how many. In this receipe, calling for 6 servings, I'd use 2 cans of beans. Also, I substitute portabello mushrooms, which would be 0 points, thus subtracting the total points for the 1/2 lb of beef, which would take off, what? 2 pts per serving? And another question - the packages of flour tortillas have 10, so is that the # to use if using corn, even tho they're smaller? The packages of corn tortillas have 24 or more I think. Maybe 2 corn torts per serving?

I love recipes like this - very simple, & very easily adaptable to personal tastes!

This was great!!! It satisfied my spicy food craving. Next time, I'm going to try it with black beans & no meat- yum!
