This "pizza" is soooooooooo good! I made this as one of the main courses dishes for a Vegetarian seder I had 2 years ago. Kids loved it!

Passover Pizza (2 points)

Amount Measure Ingredient -- Preparation Method

3 medium zucchini -- (up to 4)- grated
3 large eggs -- beaten
1 cup matzo cake meal
1/2 teaspoon salt
2 cups shredded mozzarella cheese
2/3 cup chopped green onions
1 cup sliced green or black olives
1/2 cup finely chopped red bell pepper
1 teaspoon dried oregano
1 teaspoon chopped fresh basil
3 medium ripe tomatoes -- thinly sliced

1. Preheat the oven to 450 degrees F. Grease a 9 x 13- inch glass casserole. Place the grated zucchini in a strainer and press and to remove the excess liquid, or wrap the zucchini in a dish towel and twist the towel, extracting the excess liquid.

2. In a medium bowl, combine the zucchini with the eggs, matzo cake meal, and salt. Mix well and spread evenly in the bottom of the casserole. Bake this crust for 8 minutes. Remove from the oven and allow it to cool for about 10 minutes. Lower the oven temperature to 350 degrees F.

3. Layer the remaining ingredients over the entire zucchini crust in the following order: cheese, olives, green onions, and red bell pepper. Sprinkle with the oregano and basil. Arrange the tomato slices in even rows. Sprinkle lightly with salt, if desired. Bake for 20 minutes or until the cheese is bubbling. Remove from the oven and let cool for at least 5 minutes before slicing. Serve at once.
