Potato Pudding (1 point)

Amount Measure Ingredient -- Preparation Method

1 1/4 pounds pared baking potatoes -- thinly shredded and
-- squeezed dry
1/2 cup grated onion
2 large eggs -- lightly beaten
1/4 cup + 2 tbsp matzoh meal
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 cup minced scallions

1. Preheat oven to 350 degrees. Spray a 13 x 9" baking pan with nonstick
cooking spray; set aside.

2. In large bowl, combine potatoes, onion, and eggs. Stir in remaining
ingredients and mix well; gently spoon into prepared pan.

3. Bake 35-40 minutes, until browned around edges. Let stand 5 minutes
before cutting into 12 equal pieces.

Serving Size (1/12 recipe)

How does this come out? It almost sounds like a pan of mashed potatoes. LSue, can you help us out on this one? Mashed potatoes are good. I'm sure this is not what it's like, but it does sound good. I'd just kind of like to know what this is supposed to be like when finished. Thanks. :D
