I love roasted peppers because roasted peppers go with almost everything and peppers are a great source of vitamin C.
I either roast the peppers just by themselves :
I buy one pepper per person, nice red peppers, wash them without cutting them and when the oven is really hot just put them in an ovenproof dish without adding anything. The peppers will have to stay in the oven untill the skin starts to wrinkle and burn. When it starts getting black it is fine. Get the peppers out and put them in a plastic bag or a glass container untill they are cold enought for you to peel the skin; the skin should peel itself really easily and you are left with the delicious flesh that you can cut lenghtwise.
With meat, in salads, to top pasta etc, they are delicious and 0 points!
other version still 0 points:
Cut the green, yellow, or red peppers lenghtwise in order to get to halves that you will use like cups. I usually do one half per person. Do not remove the skin! Cut tomatoes in quarters, crush some garlic, add all the herbs you like etc and just fill the halves, pressing, the tomatoes, the herbs and the spices you want to add so that each half is full. Place in a very hot oven. The content of the halves will reduce and the tomatoes, garlic and herbs will cook in the pepper's halves. It is 0 points and it look really good at dinner served with meat, mash potatoes etc. It is also delicious cold eaten by itself.
