Hiya,
I have always wanted to try this recipe for Rosh Hashanah (the Jewish New Year), but have been intimidated due to how high the points in the original recipe were. So I increased the servings from 10 to 16 and omitted the nuts which brought a serving to 3 points. Chocolate Honeycake (3-4 points)
Recipe By :Mollie Katzen (adapted from The Enchanted Broccoli Forest)
Serving Size : 16 Preparation Time :0:00

Amount Measure Ingredient -- Preparation Method

6 tablespoons canola oil
1 ounce unsweetened baking chocolate
3/4 cup honey -- "light" flavored
2 eggs
1 teaspoon vanilla
1/4 cup unsweetened cocoa powder
1 cup flour
1/2 teaspoon salt
1 1/2 teaspoons baking powder
1/2 cup chopped nuts -- optional
1. Preheat oven to 350 degrees. Grease an 8" square pan or equivalent.
2. Melt oil and chocolate in a double boiler. Set aside to cool.
3. Beat the honey at high speed with an electric mixer for 5 minutes. Add eggs, one at a time, beating well after each. Stir in vanilla.
4. Beat the cooled chocolate mixture into the honey and eggs.
5. Sift the dry ingredients together and fold them in to the batter. Stir until just combined.
6. Pour into pan and bake about 27 minutes.
Note: We're not big on nuts in cakes so I omitted them. If you use nuts, each serving is 4 points.

NOTES : For a more decorative cake, dust with powdered sugar.
