Chocolate Chip Kugel (3 or 5 points)
Recipe By :Paula Miller Jacobson (adapted) 5-00
Serving Size : 12 Preparation Time :0:00
Categories : Side Dishes- Kugels
Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
8 ounces egg noodles, yolk-free -- (or chocolate noodles)
3 eggs
2/3 cup sugar -- (was 3/4)
16 ounces sour cream, light -- (or nonfat vanilla yogurt)
8 ounces nonfat cottage cheese
1 teaspoon vanilla extract
2 tablespoons butter or margarine -- butter is better (originally called for 1/4 cup)
1/2 cup chocolate chips -- (was 3/4)
Cornflake crumbs -- *see note
Cinnamon-sugar -- for topping
Boil noodles and drain in cold water. In bowl, beat together eggs and sugar.
Then add cottage cheese, sour cream and vanilla. Melt butter and use 1/2 in
the mixture; (save the rest). Fold in the noodles and chips to the mixture.
In 9x13- inch pan put rest of the melted butter on the bottom and sprinkle
cornflakes crumbs (note- recipe didn't say how much...I would just use a tbsp or so just to cover the bottom) over the butter. Fold in the noodle mix. Sprinkle lightly with cinnamon-sugar. Bake at 350 for one
hour or until brown.
Paula's notes: Can use fat free cottage cheese and lowfat sour cream and less butter and it takes just as good!
Linda's notes: I input these reduced fat ingredients into Mastercook to reduce some of the calories and fat and to lower the points...the original recipe came out to 8 points per serving... using the substitutions the points are now 5. However, if you cut the kugel into 24 pieces, the points would be 3.
