Carrot and Sweet Potato Tzimmes (3 points)

Amount Measure Ingredient -- Preparation Method

1 bunch carrots -- peeled
6 large sweet potatoes
1/2 cup prunes -- pitted
1/3 cup beef stock -- or orange juice
1/3 cup honey
1/4 teaspoon cinnamon
1/8 cup margarine -- (up to 1/4 cup)
OVEN: 350 F
Coat a casserole dish with cooking spray.
Cut carrots into 1-inch slices; cut sweet potatoes the same. Boil in
salted water to cover til tender, but firm; drain.
Place in a casserole with remaining ingredients; stir gently to
combine.
Cover and bake for 30 minutes. Stir gently and bake, uncovered, for
another 10 minutes.
