Sweet Farfel Pudding (3 points)

Amount Measure Ingredient -- Preparation Method

Pudding:
1 1/4 cups Egg Beaters® 99% egg substitute -- (or 5 eggs)
1/3 cup sugar
3 cups matzo farfel
3 cups nonfat cottage cheese
1 1/2 cups sour cream, reduced fat
1/3 cup margarine, light
3/4 cup raisins
3/4 cup apricot spread, low sugar
Topping:
1/4 cup sliced almonds -- lightly chopped
3/4 cup matzo meal
2 tablespoons sugar
1 teaspoon ground cinnamon
Pudding: Soak farfel in cold water; squeeze out excess water. In
mixing bowl, beat eggs until light. Gradually beat in 1/3 cup of
sugar until fluffy. Add farfel, cottage cheese, sour cream,
margarine, raisins and preserves to egg mixture; blend well. Turn
into a 9 x 13- inch baking dish.
Topping: Mix matzo meal, sugar, and cinnamon together. Sprinkle
on top of farfel mixture.
Bake in 350 degree oven for 1 hour. Serve warm or cold.
