Potato Latkes (2 points)

Amount Measure Ingredient -- Preparation Method

6 Potatoes
1 onion
4 egg whites
1/4 cup matzo meal -- (or flour)
Salt and pepper -- to taste
- Peel potatoes and shred in food processor.
- Remove potatoes and squeeze out water.
- Shred onion in food processor.
- Add all other ingredients to food processor and using steel knife,
process until well mixed.
- Fry in nonstick pan until golden brown using a small amount of
cooking spray.
- Serve with nonfat sour cream or applesauce. (count the
additional points)
