1/3 cup cold water
2 tablespoons soy sauce, low sodium
2 teaspoons cornstarch
1 teaspoon sugar
1/2 teaspoon ginger root -- grated
1/8 teaspoon black pepper
1 tablespoon vegetable oil
1 cup carrots -- thinly sliced
1 cup snow pea pods, fresh
1 cup green onions -- cut in 1" pieces
1/2 cup fresh mushrooms -- sliced
8 ounces waterchestnuts, canned -- drained

1. Stir together water, soy sauce, cornstarch, sugar, ginger root
and pepper. Set aside.

2. Heat oil in wok. Stir-fry carrots for 2 minutes. Add snow peas;
stir-fry for 30 seconds. Add onions and mushrooms; stir-fry for 1
1/2 minutes or until vegetables are crisp tender. Stir in
waterchestnuts. Push vegetables away from center of wok.

3. Stir sauce and add to center of wok. Cook until thick and
bubbly. Cook and stir for 1 more minute. Mix with vegetables.
