View Full Version : Cranberry Slim-down bars

1 cup whole wheat flour
1/4 cup soy flour
1 cup uncooked oatmeal
1/2 cup brown sugar
1/2 teaspoon baking soda
1 cup applesauce
1 whole egg or egg subsitute
1 teaspoon vanilla extract
1/4 cup whole flax seeds
1 cup dried cranberries

Combine flours, oatmeal, brown sugar and soda; add applesauce, egg, and vanilla. Mix well. Add flax seeds and cranberries and pour in a 13 x 9 pan sprayed with no calorie cooking spray. Bake at 350° for 20 to 25 minutes. Cool and cut into 15 bars.

I package these individually and freeze them. Don't know if they flush out the fat as the article says, but they are large and filling and only 2 points each.

I have read that flax seed really should be cracked for your body to get the best use of them. I add them to my cereal in the morning but first grind them a little with a coffee grinder that is saved for that purpose. Just passing on some info that you might like to know. I will crack them when trying your recipe.
