Herbed Cottage Cheese with Mixed Greens

Servings: 5; Serving Size: approx. 1/2 cup cheese mixture on 1/2 cup greens
Weight Watchers Info: Calories: 104; Fat: 6; Fiber 1 = 2 points

Ingredients:

1 1/4 cups Cottage cheese
2 tablespoons Mayonnaise
1/4 cup Green onion -- chopped
2 tablespoons Fresh Chives -- chopped
2 tablespoons Fresh parsley -- finely chopped
2 teaspoons Fresh basil -- chopped
1/2 cup Cucumber -- finely diced
1/4 cup Green bell pepper -- finely chopped
1/4 cup Radish -- coarsely chopped
1 teaspoon Lemon juice
Salt and pepper -- to taste
1/2 cup Spinach leaves -- chopped
1/2 cup Radicchio -- shredded
1/2 cup Arugula leaves
1 cup Romaine lettuce leaves -- shredded

Directions:
1. Place cottage cheese in mixing bowl.

2. Add mayonnaise and blend.

3. Add remaining ingredients.

4. Mix well and chill until ready to serve.

5. Toss greens together. Spread on individual plates and put a scoop of cottage cheese mixture in the center of each.
