A couple days ago I wrote to daily thread raving about Chile Pepper Magazines (Oct) Great Salsa Issue. People asked me to post recipes. Well, there are 59 salsa recipes to choose from but I decided on one. This one is from Chef Bill Wavrin who does Rancho La Puerta Spa cooking (and frequently has recipies in the magazine).
Smokin Papaya Chile Salsa
1 orange, juiced
1 cup papaya, diced
1/2 cup pineapple, diced
1 lime, juiced
1 scallion, chopped
2 chiles de arbol, toasted & minced
1/2 cup red onion, diced
1 red bell pepper, seeded and diced
1 TBSP fresh oregano, chopped
3 TBSP frest cilantro, chopped
3 cloves garlic, minced
salt to taste
Combine all ingredients on a bowl and refrigerate till ready to use.
