Hey, y'all, I'm on a roll with this cooking thing, and I'm discovering that I'm really not a bad cook at all! http://www.healthdiscovery.net/ubb/smile.gif
I followed up my pasta with yum sauce (check out the recipe in the pizza/pasta section) on monday with a fantastic roasted veggie sandwich on tuesday!
So here goes:
good sized piece of french baguette bread (4 points worth), sliced lengthwise and about half of the guts scooped out (to make a little "boat" -- I left the edges intact to hold stuff in)
1 sm/med eggplant, sliced 1/4" thick and then in quarters
2 roma tomatoes
1/2 zucchini, sliced and quartered
red and green pepper strips
about 4 cloves garlic, NOT peeled.
1/2 oz feta cheese
preheat oven to 400/425 F Spray cookie sheet with oil spray.
Put cut veggies and whole garlic cloves on cookie sheet, spritz with oil, and bake for about 20-25 min (or until eggplant is soft).
Take out garlic cloves. Mix the roasted veggies together in a bowl (or on cookie sheet if it's got sides to keep it all in). Cut the ends off the garlic cloves and squeeze the garlic gook in with the veggies, mix.
Put half the feta in one "bread boat", half in the other. top one "boat" with veggies (I used a very generous amount) and smash the other boat on top to make a sandwich. Let sit for a few mins so the feta starts to melt.
Eat, and resist the urge to make another one!
Veggies serve 2-3, and could be used for lots of other things (pasta, baked potato topping, etc)
points: 6 for whole sandwich. ZERO for veggies!
note: the veggie mix is good cold, too! And if you don't like feta cheese, substitute something else!
