Taco Salad (A meal in itself)YUMMY!! 7 pts.

Cooking Oil- 2tsp
Lean Ground Beef- 1lb
Chopped onion- 1 cup

Envelope taco seasoning mix- 1x1/4 oz
Canned tomatoes with juice, broken up- 14oz
Grated light cheddar cheese- 1 cup

Cut or torn lettuce- 6 cups
Medium tomatoes, diced- 2
Gated light medium or sharpe cheddar cheese- 1/2 cup
Green onions chopped- 2
Crushed tortilla chips- 1/2 cup

Scamble fry ground beef and onion in oil. Drain.

Add taco seasoning mix, tomatoes with juice and first amount of
cheese. Heat and stir until cheese is melted.

Divide lettuce among 6 plates. Scatter diced tomato over each.
Spoon hot beef mixture over top. Sprinkle with second amount of
cheese. Scatter green onions and tortilla chips over top. Serve
imediately.
Serves 6

I am a taco salad lover and am always looking for low point taco things, if I may I have a suggestion! I use the morning star spicy black bean burger.......1 point!!! Everyone else in family gets the ground hamburger... just a thought! http://www.healthdiscovery.net/ubb/smile.gif

I myself am a taco salad lover. BUT, I never have ever in my life fried any kind of ground beef, chuck, or round in oil. It always makes its own grease for me and then when it finishes cooking and browns I put it in a strainer and run hot hot water over it for just a second before I add the seasonings and let it simmer.
Is there a reason for adding the oil to fry the beef in? Oh, and I also love onions in mine too. http://www.healthdiscovery.net/ubb/smile.gifJust wondering??

Another Taco salad recipe

2 Ortega Taco shells 2 pts
1/2 cup lean ground meat 4 pts
1/2 bag shredded lettuce 0 pts
1 tomato 0 pts
1 tbsp ff sour cream 1 pt
taco seasoning 0 pts
taco sauce 0 pts
1/4 cup diced onion
I ususally cook up some extra meat and then measure my serving out,

brown meat and onion, pour into strainer and run hot hot water over for just a few seconds.
Put meat back into pan, add 1 cup of water or (whatever amount needed) to simmer meat when the taco seasoning is added. Warm up the taco shells in the microwave for 30 seconds. When meat and onions have simmered, put lettuce, tomato, onion-meat mixture, taco sauce, ff sour cream and crunch up shells in a bowl. Mix and enjoy. I sure do.

If you use the amounts listed above, it is about 7 pts total.
