Hi All!
I make this in the crockpot and it is awesome! It makes alot, so you can halve it, but keep the onion, garlic and celery the same. Or make the whole batch and freeze the extras, like I do.

LENTIL BARLEY STEW (Big Batch)

1 cup barley -- hulled
2 cups lentils -- sorted and rinsed
12 cups fat-free chicken broth
1 large onion -- chopped
4 cloves garlic -- minced
2 medium carrots -- chopped
2 stalks celery -- chopped
10 ounces spinach, frozen -- cooked and drained
1 teaspoon oregano
1/2 teaspoon cumin
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes
2 tablespoons salt-free garlic and herb seasoning
2 teaspoons miso -- optional


Place everything (except miso) in a crockpot and cook on High for 1 hour and Low for 7-8 hours, or until lentils and barley are cooked and tender. Taste and adjust seasonings.

Makes 16 one cup servings, each 2 points

What is "hulled" barley? :confused: I've heard of pearled barley but not hulled.
