Hi All!

This is my variation on the Navajo Beef & chili posted in this forum. My family loved this and I pointed it at 3 points per cup using venison, but I also pointed it using other options. Yummy!

MEATY CROCKPOT SOUP

Amount Measure Ingredient -- Preparation Method

1 1/2 pounds venison -- stew meat, cubed
1 large onion -- diced
2 large cloves garlic -- minced
28 ounces canned tomatoes -- with juice, cut up
4 1/2 ounces green chiles -- with juice
16 ounces corn -- whole kernel, with juice
1 1/2 teaspoons oregano
1 teaspoon ground cumin
1/4 teaspoon ground red pepper -- or chili powder
6 tablespoons cornmeal, whole-grain


Combine all ingredients, except cornmeal, in a crockpot, mixing well.
Cover and cook on HIGH for 1 hour, then LOW for 7 - 8 hours.

One hour before serving, turn to HIGH. Stir in cornmeal. Cover and cook on HIGH 30 minutes.

Taste and adjust spices and add salt and pepper to taste.

Serves 8.

WW Points - 3 per serving using 1 1/2 pounds lean venison stew meat
4 per serving using 1 1/2 lean beef stew meat
6 points per serving using 1 1/2 pounds extra lean ground beef
4 points per serving using 1 pound extra lean ground beef
4 points using 1 1/2 pounds lean ground turkey
3 points using 1 pound lean ground turkey
3 points using 16 ounces cooked black beans

Sounds wonderful! Do you eat a lot of venison? My husband is an avid hunter, and venison is one of our staple meats. We rarely buy beef. If you are interested in sharing some recipes, email me. I've got some great ones!

Hi Patty!

Yes, actually we do eat quite alot of venison when we have it, but it goes quick around here. Dh doesn't hunt, but we have some neighbors who always give us a deer or 2 and dh just has to get his own tags.

I sub venison in every place calling for beef, but it is SO much less fat and tastes so good!

I'd love to swap recipes!
