View Full Version : Deli Roasted Chicken

I made this over the weekend in my 7qt. Oval crock. It was fabulous! Really,really, easy and unbelievably good...a real find.

I found this wonderful recipe at yahoo groups.

1 chicken (I cooked a 9 pounder)
spray olive oil
Lawry's seasoned salt -no substitutes
Aluminum foil

Clean chicken inside and out. Spray with olive oil spray. Sprinkle with Lawry's. Spray inside of crock with pam.
Note: Do not put any water in the crock

Roll some wads of aluminum foil into balls and put them in the bottom of the crock. The chicken is going to sit on these.

Put chicken back side down in crock on top of aluminum balls.

Cook on High (will not come out the same on low), 4-6 hours.

Note: the person who posted this recipe said you had to use the aluminum to get the deli taste. I didn't believe it then, but boy do I now!
This chicken tasted very close to one you would buy, precooked, in the deli section of your supermarket.

Now before you pooh..pooh..this one, give it a try.

One more thing, before you ask "why only on high"..the taste won't be the same if you cook it on low. I can vouch for this.

I'm going to try this - I'd love to duplicate those roasted chickens!! But, do you think I could use already cut up pieces? What kind of adjustment for length of cooking time do you think? Thanks for the recipe!

Hi Jo, Yes, this is quite a recipe. With the whole chicken, it tasted very close to the deli chickens from the supermarket.

I don't know if you will get that same taste from cut up chicken. As far as time goes, I know it can only be cooked on high to get the same taste. If you use a 3, 1/2 qt. crock, and pack it tight, I would still use 4-6 hours.

BTW, I had some of the chicken left, so tonight I am making a ww chicken pot pie. If it comes out good I will post it after dinner for everyone. Only 5 points/serving. So far, it looks great, and I don't think I can miss with the delicious chicken leftovers.

Let me know what you think if you make the deli chicken.

I made another one over the weekend. This one came out even better. I put a thermometer in it while it was cooking, so I could just look through the glass top to see when it registered done.
Be careful not to overcook it so it doesn't dry out, especially where it can only be cooked on high.

Hi everyone. This recipe sounds de--lish! I love the deli roasted chickens! I only have a 4 qt crock pot though, do you think it would work in a westbend electric roaster that sits on the counter? If so how long would I cook it for, and at what temperature? It does have a wire rack to keep if off the bottom. Do you think I would still need the foil? phew! I think that is enough for now!

Hi Lana,

With regard to the deli-chicken, I have only made it in my 7 qt. oval crock. I'm not sure how it would come out if you cooked it in something else.

I'm sure you could use a 4-qt.crock, however, you would have to get a much smaller chicken. My 7 qt. oval holds an 8-9 pound chicken. I also cook turkey in it. It cost $39.99 at K-Mart (that is the only place I have seen it), and it is worth every penny.

Now, as for the foil....all I can tell you is that before I got this recipe, I tried cooking the chicken without foil and just sitting on an
insert I put in the crock. The chicken did not taste like the deli-chicken. In fact, everyone complained that the chicken had a different consistency than when it is cooked in the oven. No one liked it. Once I found the deli-chicken recipe, I was off to the races. Everyone raves about it.

Also, since I am not too crazy about using the drippings from the pan that the foil has been sitting in, I have come up with a terrific, pointed of course, gravy to go with the deli-chicken. I'm going to post it now.

Hi Lana, Good idea about picking up one of those 7 qt. crocks. Just make sure it is an Oval one.

BTW, I have a 1.5-points/slice bread baking in my ABM right now(it's made with fat-free yogurt). I can barely wait until it's done. If it comes out good, it will be the lowest pointed one I have made yet. So far, it smells great, and it's really rising well (also had a great dough ball).
If it's a keeper you will see it posted later on this evening. Keep your fingers crossed.

We weren't planning on eating it for dinner tonight, DH & I are both taking it for lunch tomorrow, but we couldn't help tasting it. Yummmmm!!! Our grocery stores have whole chickens on sale for $.49/pound. this whole chicken cost me only $2! :D I'm going to stock up on chickens now! It was so easy, and so tasty! If you like this, take a peek at the gravy recipe I make for it. I rarely eat gravy, however, my family likes it. It bothered me to be making gravy that foil had been sitting in. The gravy recipe I posted for this is delicious, easy, and, of course, pointed.

Hi Dawna,

Just thought I would stop by and let you know that I tried this chicken on Sunday and Man o Man was it good! so Juicy and tender. I could not believe how close to the deli chicken it tasted. I have not pruchased the oval crock pot yet, so I stuffed a 6 pound chicken in my 4 qt crock pot. (on end, and it just made it) :D Only sad part was the next day my DH left the container of chicken on the counter after re-heating some for dinner & left the room for a few moments and our DD (dear dog!) got the rest of it before any body else did. :mad: Well I guess I am going to stock up on whole chickens now! Also I think I will hold out on buying a crock pot locally because I saw one on QVC for the Cooks Essentials line that I really like. It's an 8-qt oval crockpot with an automatic shift as well :D

Good Morning Dawna,

The crock pot is not by Rival. It's by "Cooks Essentials" which I think may be made exclusively for QVC??? Check it out, go to www.QVC.com and do a search. The Item # is k-73949 and is $39.84 You can also type in "Cooks essentials" and everything offered in the Cooks essentials line will be listed. I just purched the Stainless steel pots and pans and I absolutely love them.

As for the gravy, I did not try it this time but will probably try it next. I really love gravy! I pour it on everything, even my veges sometimes! :D Oh!

Well now my mouth is watering for more chicken and it's only 7:55 am ..........gotta go by me another chicken!

I know I've heard alot about concerns of using aluminum foil. Can anyone tell me if this could pose a danger? I know that they have shown a link between aluminum and alzheimers. I saw a Martha Stewart show where she mentioned that she never lets the aluminum foil come in direct contact with her food. She made a recipe that called to be wrapped in aluminum foil and she put parchment paper between the foil and the food. I doubt this would work here-no clue really. This recipe sounds so good-would love to try but concerned about aluminum.

Hi there, I also got that insulated bag with my crock. You are going to love this crockpot!

The only concern I have about the aluminum foil is that I would not want to use any of the liquid from this recipe that has had the foil in it. That's why I came up with the gravy for it.

Well Dawna...you convinced me to go K-Mart and buy the Rival 7 quart crock pot just so I could make this chicken!! My crock also came with a free travel bag to keep things warm if you are taking it somewhere, so that was an added bonus for the same price (gotta love free stuff :D ).

I have not heard any concerns regarding the use of aluminum foil and I use it quite often, so I would also be interested in any comments about that.

I will post Friday night to let you know how my family votes on the deli chicken and I even copied down your gravy recipe too. Thanks so much and keep those great crock pot recipe's coming - I now have two of them to put to good use!!

Good Morning Dawna:

I have one question about the instructions you gave for making this chicken. You said to put the chicken in the crock pot "back side down". Does this mean that the top of the chicken (breast) goes in the bottom or am I just confused?

I plan on having this for dinner so I will be starting it in the next 2 or 3 hours. I also have an almost 9 pound chicken. Do you think this would need more cooking time or will 6 hours on high be enough?

Hi, The back side down thing is the way the recipe described it. I also found this confusing, however, I just take it to mean that the underpart of the chicken should be touching the foil.

Do you have a thermometer? This is what I put in my chickens to tell when they are done. For 9 pounds I would probably allow another 30 mins. or so, that is, if you are not using the thermometer

You are not using a frozen chicken, right?

On another completely different topic, I am trying to figure out if I should put down points for Salsa. Do you know? If you do, would you please go over to Cybergranny's and tell me. That is where I posted the question.

I came home expecting my whole house to smell great and it didn't??? The crock pot is defective and only cooked the chicken a little bit so now it's in the oven to finish cooking for tomorrow's dinner. I guess we will be eating out tonight!!

I'm not sure what you are talking about with the salsa, so I will go over to the other forum and see if I can help.

I will be sure to let you know how it turns out when I get a crock pot that works!!!!

Hi Dawna -

Just wanted to let you know that even though I had the bad experience with the crock pot and had to finish cooking the chicken in the oven - it was so juicy and tasted delicious - so it must have been the way it was prepared that made the difference. That was even after being in frige overnight because we didn't actually eat it until tonight. Thanks so much for the recipe. I am sure this will be enjoyed many more times in my house!!

Also the recipe you posted for the chicken gravy is wonderful. It seems so much healthier than making it the old fashioned way with all that grease but it still had a nice flavor. The only thing I added was a little bit of Gravy Master to darken it up a bit. "Wonderful" is all I can say about my dinner tonight.

By the way, I did save the receipt for the crock pot and it is going back tomorrow for a new one.

Dawna: I have to say I had my doubts about this one, but it's truly a keeper. DH loved it. What I want to know is what do you do with the aluminum? Can you keep the balls and reuse them?? JK! ;)

Incidentally, I made mine into tubes in the bottom of my crock. Worked fine.

Hi Jeannette, I originally had my doubts about this one too, but I'm glad I decided to give it a try.

With regard to the alum. foil, you're joking right? I don't even touch them with my hands. I use kitchen tongs to remove them from the crock.

Seriously, I have had food poisoning twice in my lifetime. Once from pork chops and another time from nasty liver. Both times I ended up in the hospital, praying to die. I don't take any chances since then.

I am trying the chicken recipe for dinner tonight. I only have a wimpy little 4 1/2 qt oval crockpot so I had to use a smaller chicken. About 4 lb. (I have never seen a 10 lb chicken before, it must look like a turkey) so I am going to check it with my instant read thermometer at about 3-4 hours. I love deli chickens and they are SSSSSSSSSSSSOOOOOOOOOOOOO expensive!!!!!!!! It will be nice to have a lower cost alternative and also be able to control the points.

Hi Susan, I'm sure it will still be delicious, as long as you use the foil. Note: I haven't quite figured out why that makes such a difference, but, hey! who am I to question. I, too, have loved those deli chickens for a long time, but, they are expensive.

Yes, the 9 pound chickens I buy are large. They are by Purdue. 8-9 pound is the limit on what my 7 qt. will hold. Boy, are the leftovers great!

Okay, I can see I am going to have to buy stock in the aluminum foil company cause I am going to be buying a lot of foil!! The chicken was WONDERFUL! We all loved it. Had it with some fresh green beans and new baby potatoes. I didn't worry about gravy or anything cause it was so juicy. I had to cook a smaller chicken because I have a smaller crockpot. It was done perfectly in about 4 hours. I wonder if you could cook a roast this way? The one thing that kind of turns me off about crockpot cooking sometimes is the mushy consistancy of the meat, but this was great. Tender and juicy but not mushy at all. I've already told my family and friends they have to try it. :D

Hi Sharon, With regard to the foil...all I know is that before I used it, I got different, sort-of mushy textured, chicken that no one was too crazy about eating. Once I found this recipe, everything changed. Personally, I think it is a combination of things...the spice, cooking on high, the oval shape of the crock, and yes, probably the foil as well.

Hey..with all of this talk about this recipe, I realize I haven't made it in a while. I'm going to make it myself again over the weekend.

I made "deli turkey breast" tonight in my 4 1/2 qt crockpot tonight. I used the foil balls, like with the chicken but altered the spices- used some hickory smoked salt, garlic and poultry seasoning, and sprinkled it with paprika to make it look pretty. It was the best turkey breast we have ever eaten. It took about 6 hours to cook ( I think it might have been slightly frozen when I put it in) and it was juicy and tender. The only thing is that the skin does not get crispy, which is actually a plus for me cause then I'm not tempted to eat it. Had that for dinner and the magic pudding for dessert! It was a great dinner!!

This is soooo good!! I put the chicken on before church this morning and when we came home it was done! I served it with Uncle Ben's Long Grain and Wild rice and Green Giant Broccoli w/ Lowfat Cheese Sauce. PERFECT!! Thank you so much for posting this!

Ok, I must tell all of you what I did, so no one will make this mistake, I only have a 2 1/2 qt. crock pot, I followed the recipe to a tee, but I had to stuff a chicken in the crock, well, my **** is so small and the fit was so tight that the chicken about boiled in it's own juices! LOL, I went to pull it our for dinner and it fell apart and then I had chicken soup! It smelled fantastic though! I have now put an 8qt crock pot on my bday list! Hopefully I will get one so I can try this again!

Anyhow, this has become a staple in my home. And Wednesday, I made a turkey breast in the crock. Sooooooo good, I'll never do it in the oven again! (get your mind out of the gutter please! graemlins/embarrassed.gif ) I tried putting the aluminum foil in it, but the turkey is too big, so it did sit in it's own juices. Well, I guess I must have done something wrong. After reading all the posts raving about the deli chicken, I went out and bought the 6.5 quarter oval Rival Smart Crock to cook a whole chicken. I couldn't log on to my ISP to check the recipe in the morning so I went from memory. I think the only thing I did wrong was use regular Pam instead of the olive oil kind. I made balls of aluminum foil and put them on the bottom of the crock and added a whole chicken that was about 5 pounds. I then set the crock to cook on high for 4 hours and it then sets itself to "keep warm" for the rest of the day.

The chicken I made was kind of dry and had a rather unusual taste to it. It was OK but I wouldn't call it a favorite of mine.

Any guesses on what I did wrong? Should I have used a bigger chicken? Would the Pam instead of olive oil make the difference in taste?

I will try this again but next time I will buy a bigger chicken and do it with a fresh chicken. This chicken had been frozen in my freezer for awhile. I also should do it on a weekend when I am home so that it only cooks for 4 hours.

Ok buddies, I am trying this tommorow, it sounds soo good, I am in the middle of moving so i have to find my crock pot.Mine is not oval but round, and it is big though.I only have a 5 lbs bird soo, pray that it works, it just sounds delish. :D

Jamie, personally I wouldn't skin the bird prior to cooking because it helps keep the meat from drying out with the skin intact.

Just skin the piece you are gonna eat, the points are the same whether you skin it before or after!

I have tried this about 4 times - wonderful. Last two times, I took the chick out and removed the skin, cut it up in pieces and covered the pieces in bar-b-q sauce. Ran it into the microwave just before eating and it was delicious. the easier bar-b-q chicken I have made in long time.

I meant to say, after it was finished cooking, I took the chicken out of crock pot and then removed the skin and cut into pieces and added sauce.

I made this deli chicken last night, turned out yummy. The foil trick really helps, the meat comes off so easy and remains juicy - I recommended it to friends - what a great idea!!

I tried making this with a couple of alterations.

There are only 2 people in my house and i have a 2 1/2 court oval crock pot so i decided to cut the size of the bird used.

I bought 6 pound baking chicken to use. I tied it up so its legs and wings didnt stick out and it fit into the pot :D

I used the Lawry's lemon pepper seasoning instead because i had rotissire chicken flavored with it before and liked it.

I used the foil balls as directed to. I found that making them smaller in size mad it easier to get the chicken into the pot smile.gif

I turned out wonderful. I was nice and moist. We had 2 meals and chicken salad made from it graemlins/crazy.gif

This recipe sounds good. I could eat chicken every nite.
But I have one problem - I always buy just skinless and boneless chicken breasts cause I have a hard time resisting the skin on a chicken. What do you do about that delicious skin. Just discard it? :(
I think I will give it a try anyway.
I also have three crockpots, but the last one I bought at Wal mart(3 qt.) is my favorite cause it has a manual keep warm setting. It is a Ge and I do believe you can also get it in a larger size.

I made the chicken in the crockpot today and it was soooooo good. I was able to resist most of the skin - but did have a taste or two. I quickly froze what we did not eat so that I would leave it alone. It was so good.

When I had this, I had no problem resisting the skin, which I was worried about. It was gross. It didnt get crisp, just kind of soggy and fatty. That was the only difference I found from the rotisserie chickens. It doesnt get great, which is good for me!

I made two cornish hens last night in my round 4 or 5 quart crock pot. The hens were really good. The meat was very tender. My husband thought I was nuts when he saw me balling up the foil. He sang a different tune after he tasted them. Thanks for the great recipe!

The only thing I did differently was add sliced bell peppers and onions in the middle of the birds. I am Cajun and we believe in onions and bell pepper, among other things. I also used McCormick Garlic Season All and pepper instead of Lawrys.

Went home at lunch time today and fired up the ol' crockpot with this receipe! Can't wait till tonite to try it out. I'll let you all know how it turns out.

While I was at home I also baked a batch of the Pumpkin Oatmeal that everyone is raving about. Sounds yummy.

Just finished supper and the deli roasted chicken got a big graemlins/thumbup.gif from my DH who isn't even a chicken lover! Very, very moist and as easy as it gets!! Definitely a keeper! Thanks for the recipe!

I made a special run out of the shop at noon today and picked up a chicken, ran home and put it in the crock pot. My DH and DS were oooohin and awwwwwin ... DS, whose favorite (until tonight) chicken was fried chicken, announced that this is the best chicken he's ever had. *faint* DH announced leftovers for lunch tomorrow. Incredible!!
P.S. Where is the gravy recipe posted??

I have wanted to fix this recipe for a long time, it sounds great, except where do you find a 9 lb. chicken?? I can only find 4-4-1/2lbs. I am in the Midwest - you would think I would be able to find one--any ideas?? :confused:

I tried this over the weekend. I really loved the way it came out. My DH said it was a little dry, but that was probably because i cooked it too long. Won't make that mistake again. The flavor is wonderful.

Yum- I made this yesterday and it was great. My chicken was about 5 lbs and I cooked it for about 5.5 hours- a bit too long. Next time I'll turn it off at 4.5 hrs. It tasted great and literally fell apart!

I make a similar version every 2 weeks or so in my crock pot...

I wash the chicken and pat dry, cut off obvious fat around the tail cavity,etc. (in fact, I remove the tail, as well), tuck the wings in and sprinkle with poultry seasoning and paprika (for flavor and color). Do not add liquid and cook all day on low. I don't use foil, and sometimes I spray the chicken with Pam before seasoning it.

Even my teenage daughter who "hates" chicken loves this recipe. I add veggies, mashed potatoes w/ff gray to complete this easy home-cooked ;) meal.

(My directions came from the Houston Chronicle a few (several?) years ago.)

I tried this recipe today, I even let it cook for 8 hours and it was soooo wonderful! I highly recommend this. I shared this recipe with my WW group tonight. My DH stood over the crockpot and ate the rest of the chicken right off the bones! I think this is a winner! THANKS ALOT FOR POSTING!

I tried this on Sunday, and even though it was good, it wasn't as great as what I was expecting. The chicken tasted like plain old chicken to me. The skin did not crisp up (and no, I don't eat the skin), and I didn't really get the deli flavour that I was expecting. I'm wondering if I'm not using enough tin foil or something. I crumpled the tin foil balls up tight and put in enough so that the chicken didn't sit on the bottom of the crock pot. Used a meat thermometer to make sure I cooked it to the right temp.

Any suggestions from those of you who have had success?

I have made this last night for the second time and it is great. I made it in my larger crockpot this time and I think it roasted better than when I literally stuffed it into my smaller pot.

I put cajun seasoning on mine and then baked it a little in the oven to crisp it up a bit.

This is a real keeper! Thanks for posting it!

3 golf-ball sized ones are just right for me. You want to lift the bird out of the juices (read FAT) and also crockpots cook at the halfway up mark, not the bottom.

I have a small crockpot, and I made this with chicken parts - I used a foil pie plate to raise the chicken off the floor of the crockpot. The chicken is tender and moist, and I am looking forward to dinner tonight!

Hi Janet, Since I don't use any of the drippings for gravy (check out the gravy recipe I posted to go with this), I take the skin off after it is cooked. I don't believe the foil makes the crock pot cook hotter.

I made this for Easter and everyone loved it. Not sure if I did it right. It fell apart as DH was trying to take it out of the crock pot. He was laughing so hard because it exploded but it did taste great. I will be trying this again.
One question, if I use a 6 lb bird do I shorten the cooking time? I thought maybe I cooked it too long, I cooked it 5 hrs, what do you think, Dawna?

edit: dont know how dont care how but its true! this is delicious and the chicken fell off the bone it was so tender.

The onlyproblem I had was after I got it on my plate and before I finished eating it, it sorta dried out. Maybe ill make some gravy next time.

Can you stand one more post about this wonderful crock pot deli chicken? I made this for Sunday dinner last weekend and DH raved about it. Told my boss about it, and he said he'd buy the chicken if I cooked it in a little kitchen at work. I brought in my Rival 3-qt crock pot and four of us had the chicken for lunch. Except the chicken my boss bought was so big there wasn't room for foil on the bottom, only for a little wad I put along one side. Because of its larger size, the chicken's thighs and part of the back touched the inside of the crock and came out nicely browned. Ta da! I don't think the foil made any difference in flavor and I will only use it again if my chicken is too small to sit up straight. I like the fat to drain straight down the cavity. Also, before cooking, I sprayed with olive oil flavored spray, then slipped my hand between the skin and the chicken breasts and also along the back to separate it enough to spray IN THERE, and sprinkle Lawry's between the skin and the chicken meat. So when I peeled off the skin (which I don't eat, even on deli chickens) the meat was flavored, too. THis is a great addition to my recipe file. Thank you! Thank you!

I made this yesterday and it turned out great!

I have heard that it's better to avoid aluminum in cooking so whenever possible I don't cook my food in aluminum so I didn't put in the aluminum foil balls. I just put in cut up potatoes and carrots, added the chicken and it turned out great! The veggies were so good they just disappeared - very unusual in my house.

Ive made this several times. Im having problems with the chicken drying out after Ive deboned it (making plates)

I usually make this on the weekend because I cook a small chicken that's done in 4 hours but yesterday I put in a frozen chicken (one that did not have the neck or giblets inside) and cooked it for 10 hours while I was at work. It was falling off the bone and really yummy. It probably would have been a little better to do it a bit shorter, maybe 8 hours but for the convenience factor you just can't beat it!

I've recently started buying whole chickens without necks or giblets then freezing them. I can put a frozen chicken on the foil in the crockpot and come back after a loooooooooooooong day of work (10 hours or more later) and have dinner ready to go. The chicken falls right off the bone. DH loves it! I've used different spice blends and they all come out great. I never would have thought to do this if it weren't for BCB! Thanks, buddies!

I had been meaning to try it for ages, and finally decided to use it when I cooked my Thanksgiving turkey breast. We went to SO for dinner, but I knew he'd want more turkey later.

I Highly recommend this ..Delish! I had read the board the night before and couldnt remember how long to cook it and if it went breast side down or what so the board was closed and I got the chicken washed it and sprinkled the Lowerys on it (forgot the olive oil on the chicken and the crockpot) didnt know how long to cook it. I cooked it 8 hrs. backside up it didnt even stick it was so good Im making this again family loved it too! GinaH

Made this today, and the house smelled wonderful all day! Only downfall was that 6 hours was way too long. The chicken was tender, but very dry. Even so, DH said to keep it on the menu. I'll have to adjust the cooking time the next go 'round.

I made this tonight. It was won~der~ful! It was a little over-cooked, as the meat was falling off the bones, and the bones were falling apart from eachother. It wasn't dry, so I didn't mind being a little too done. Eitherway, we loved it and plan on making this dish on a regular basis.

I know I'm like the millionth person to say this, but this is SOOO good, I can't believe it. I didn't have Lawrys, but I used Mrs. Dash Onion & Herb, and all I cansay is YUM! My DH loved it, there were no leftovers from a 4 lb. bird!! He said that it tasted like the chicken from the grocery store, but more moist!

You must know, I NEVER cook, unless it is a holiday or something! But I stopped home on my lunch hour, popped it into my 4 qt. round CrockPot, and when I got home at 6, it was falling off the bone! The skin is icky though, but that is NOT a complaint, because if it were crispy I'd be tempted to eat it.

THANKS FOR THIS RECIPE, I'LL BE MAKING THIS AGAIN!!!

I am so glad I found this recipe. I have been sharing it with all of my friends. Even those who don't follow WW but I know like to eat healthy. So far, I have been making this once a week. I make it in my 4 1/2 qt. crockpot. I find the "young hens" at Food 4 Less here in So. California. They come 2 to a bag so I have one to use right away and one to freeze. I also have experimented with different spices. My girlfriend uses "Emeril's Essence" which she says turns out fantastic. Yesterday, I went to the local swapmeet and bought a new spice which I am trying out today. It's a kind of Cajun spice with a little kick to it. I can hardly wait till it's done to try it. I love making this on Sunday when I come home from church -- that way I have the leftovers for the rest of the week. It's really delicious cold! I think the reason it comes out better when you sit it on top of the foil balls is that it lets all the grease drain to the bottom of the pot. That way your chicken is not just roasting in it's own grease. This has definitely become one of my staples to keep on hand.

In the interest of science, I saw this thread and remembered I had made the Deli Chicken. My experience was not so great. I also had "roasted" a chicken in the oven, at a high temperature (450, I believe) on one of those metal stands that looks like the chicken is standing up?!

The meat from the roasted chicken in my "experiment" proved to be the better, in my opinion~ :wave:

So glad you liked it! and you have reminded me that I haven't made it for a long time, but the last time I did, I used a small oval-shaped trivet in the bottom of my large oval crock instead of the aluminum balls. It came out just as good. Using aluminum in this recipe never felt right to me.

I made this delicious dinner last night. I was doing VBS this week so I needed something to do the work for me... the crockpot. My dh was very skeptical, but I have seen wonders worked on these boards so I had loads of confidence. Needless to say he wants more! He told me next time I should make two! I said, "Why?" He said, "One for me and one for you and the kids!" LOL

Was skeptical but anxious to try this recipe.
I made a turkey breast. It came out good, however:
1) I think you have to wad up the tin foil into big-ish balls (3 inch diameter balls or more). I say this because the turkey breast ended up sitting in about an inch of liquid despite the wadded foil.
2) I didn't taste any of the seasoned salt flavor. It was more just like white meat turkey flavor. possible because the flavoring goes on the skin and I peeled the skin off.
3) The skin (which I assume everyone peels off anyway) was really rubbery and ugly looking (especially the breast which was "soaking" in the liquid)
4) I took it out after 5 hours and left it covered for another two and it got kind of dry. (since i served it with a nice mango/ginger salsa that I made it was still good).

Does anyone know if you can cook this for a longer time using the low setting?

i am making this for dinner tonight for the first time.... it is still in the crockpot, actually... it smells divine!! i am not too sure however if i put enough seasoned salt on it.... i worry that it will just taste like chicken and not very seasoned....... next time, i think i will use more seasoning..... can anyone give an approximate amount of seasoning to use on the chicken? how heavy should it be put on??

I am new here and had much difficulty finding the gravy recipe (until judyjudyjudy included a link to it--Thanks Judy!).

But...can anybody tell me what "bumping it up" is?

i shredded mine (rather it fell apart) so i just put bbq sauce in it and i know that this will be a staple! soooo goood!

i made this chickent tonight and it was awesome! very much like the precooked deli chicken you would buy in a supermarket, dh and dd loved it and dh is going to use the leftover chicken to make soup tomorrow, glad i tried it, will definitely make again.

I do not know if this has been asked as I have not read all the posts. I was wondering if the foil is to keep the chicken out of the grease. I have a metal rack that fits in my crockpot that keeps meat out of the grease and I was wondering if that would work just as well.

Hi Lana,

With regard to the deli-chicken, I have only made it in my 7 qt. oval crock. I'm not sure how it would come out if you cooked it in something else.

I'm sure you could use a 4-qt.crock, however, you would have to get a much smaller chicken. My 7 qt. oval holds an 8-9 pound chicken. I also cook turkey in it. It cost $39.99 at K-Mart (that is the only place I have seen it), and it is worth every penny.

Now, as for the foil....all I can tell you is that before I got this recipe, I tried cooking the chicken without foil and just sitting on an
insert I put in the crock. The chicken did not taste like the deli-chicken. In fact, everyone complained that the chicken had a different consistency than when it is cooked in the oven. No one liked it. Once I found the deli-chicken recipe, I was off to the races. Everyone raves about it.

Also, since I am not too crazy about using the drippings from the pan that the foil has been sitting in, I have come up with a terrific, pointed of course, gravy to go with the deli-chicken. I'm going to post it now.

I am also wondering how you get the taste of the seasoning if you take the skin off after cooking. I read that one person put the seasoning between the skin and the meat. Do you find that you still get the flavoring if you just put the seasoning on the skin? Should I be putting seasoning in the cavity, too?

Fixed this for dinner today. Stuck a medium lemon inside the cavity while cooking and it made the chicken breast soooo moist and juicy.. yummm!!!

Can't wait to cook this again. Will be great with BBQ sauce or on salads.

I dont eat the skin, so I tried the suggestion of rubbing the seasoning UNDER the skin, and it helped a lot. I recommend doing that!

Deb, I made a smaller one when I did this, and I still did it on high, it came out perfect :) enjoy.

This recipe does work with boneless, skinless chicken breasts.

just bumping this one up. it is absolutely delicious and is both flex and core. if you have nver eaten this you really must. i like this so much better than the rotiserrie chicken you can buy at a deli.

Hi all.....

I've always wanted to try this recipe, but I keep hesitating in that I think that without any liquid etc., the crock will get "too hot" and the insert sleeve crack. (Or the crock will become a fire hazard.....even though it is a fairly new one) Am I alone with this concern ? Or is this just not an issue ???

It's never been an issue with me. The chicken renders a good bit of liquids, but remains moist. I do spray the crockpot liner with olive oil to prevent sticking.

This recipe generates its own liquid as it cooks. I've made it a couple of times.

I had the same concerns, but am hearing that people are making crock pot foods without liquids and it's ok. You could do it on the weekend when you're home with it, or at least in and out fo the house.

Someone on another forum posted that she made a roast in a crockpot without any liquid, and it was so good that she'll do it this way from now on. I haven't tried that yet.

Thanks to Tish and Llama Mama for their responses. I tried this on Sunday, and I had no problems at all......despite my concerns. I'll do this again for sure, but I admit doing a roast in the crock has me intrigued a bit. (Especially with not using any additional liquids).

I had good results but a little overdone. Will do an hour less each time in future till I find when it slices rather than flakes. Have passed it on to several very enthusiastic friends.

Dumb question...

Does "back side down" mean the chicken is placed in the crockpot upside down, so the white meat is on the bottom?

I tried this yesterday and LOVED it...despite the fact that my crock pot died about two hours in and I had to transfer it to a smaller one.
It was so good and moist and so easy to make.

I'm not sure if it's the white meat on the bottom, I never really paid much attention. But, put it in there with the breast part up. My chicken had one of those nifty gadgets in it that pops out when it's all cooked. That was on the side that goes up. So maybe yours will have that too. :bcb_smile

NOTE: WE USE DRUMSTICKS AND LINE THE CROCK POT WITH ONE OF THE LINERS. EASY CLEAN UP!

Apparently I'm alone in this, but I didn't find this recipe fantastic. Perhaps if the Lawry's was substituted - I think that's what made it :bcb_sick: to me.
