My DH made this stew this week, and it is delicious!

Crockpot Beef Stew

3 potatoes, diced
5 carrots, diced
4 stalks celery, diced
2 small onions, chopped
1 head (not clove) garlic, minced
1 large tomato, blanched and chopped
4 T barley
4 beef bouillon cubes
1 3/4 pounds lean beef
1/2 t rosemary
1/2 t savory
1 t salt
1/2 t pepper
2 T flour
2 T corn starch

Cube and brown the beef. Add flour to beef and stir together. Combine all ingredients except potatoes, corn starch, rosemary, and savory in a crock pot. Cover with water. Cook on high 12-24 hours. 1 hour before serving, add potatoes, rosemary, and savory. Immediately before serving, thicken with corn starch.

Linda, This looks great. My family loves beef stew, and I love cooking in my crock pots. Also, I think 3=points for 1-cup of beef stew is pretty darn good.

I thought that was amazingly low, too, but we put the recipe in Mastercook and measured the yield, so it must be true!

just asking, did you use lean sirloin tips cut up, or what kind of beef did you use???

Surprizingdaughter, I don't know what kind of beef it was. I have never bought beef in my life--and that's saying something since I'm 37!! My DH is the cook in the family, and when left to my own devices, I eat chicken.

The beef was left over in the freezer from when I sent my DH to the store to buy the meat for a recipe that called for "lean round steak". I don't know what exactly he bought. I'll ask him if he can remember what it was, and I'll post it if I get a positive answer, but don't hold your breath! tongue.gif
