View Full Version : Chicken Ratatouille Stew

4 boneless skinless chicken breast halves, cut in 1" pieces
1 (26oz) jar spagetti sauce
1 med eggplant, peeled, coarsely chopped
2 tomatoes, coarsely chopped
2 small zucchini, sliced
1 bell pepper, cut into 1" pieces
1 large onion, chopped
3 cloves garlic, minced
1 t dried basil
1 t dried oregano
1/2 t salt

In slow cooker, combine all ingredients; mix well. Cover; cook on low for 7 hours.
Makes 8 servings: 3 points per serving

170 cal; 4g fat; 35mg cholesterol; 450mg sodium; 17g carbohydrates; 4g fiber; 16g protein

Yes, Barbara..This looks more like it. I have been fiddling around with that Ratatouille recipe I posted yesterday for a while. DH and DS said it was good, but something was missing. I am doing to make it tomorrow, this time with the chicken.

P.S. I am making my pot roast cooking right now in my 3 1/2 qt., and will soon have roasted baby red potatoes, as a side, cooking in my crockette also. My DH wants the roasted potatoes every day now. He even wants them as snacks in the evening.
