1 large jar of your favorite spaghetti sauce
(Note: this will be the only pointing you
will do for this recipe)
1 eggplant, chopped (peeler or unpeeled)
2 ripe tomatoes, chopped
2 small zucchini, thinly sliced
1 green bell pepper, cut in 1" pieces
1 large onion, finely chopped
3 cloves fresh garlic, put through press
1 tsp. fresh basil leaves
1 tsp. oregano
(red pepper flakes, to taste
Spray crock (I used my 3 1/2qt.) with pam. Put all ingreds. in crock and mix well.
Cook on low 8-9 hours.
When I made this, I used it on pasta. It was very good.
The only pointing you will do in this is for your sauce.
Note: Healthy Choice sauce does NOT work well in this recipe. Too bitter!
