I've only been back OP for the past week. I haven't made this dish for a couple weeks, so I haven't figured out the points yet. (Need to get more soup from the grocery store!!)

In the crock pot, put a package of boneless, skinless chicken breasts. (Sometimes, I'll use a family pack because this is a great leftover. Bonus: My kids love it!) Add one can of reduced fat cream of chicken soup (two if you're cooking the family pack). Don't add anything to the soup. The steam from the crock pot will thin it out. Put the lid on. I'll put the crock pot on low when I leave for work in the am. It's ready (and you can cut it with a fork) when I get home. It takes about 2-3 hours if you cook it on high. I serve this over mashed potatoes, baked potatoes, or rice with a side of veggies.

Crockpot Sour Cream Salsa Chicken


4 skinless boneless chicken breast halves
1 package reduced-sodium taco seasoning mix
1 cup salsa
2 tablespoons cornstarch
1/4 cup light sour cream

Spray the crockpot with cooking spray. Add the chicken breasts. Sprinkle with Taco Seasoning. Top with salsa.

Cook on low for 6-8 hours.

When ready to serve, remove the chicken from the pot. Place about 2 T cornstach in a small amount of water. Stir well. Stir the cornstarch mixture into salsa sauce. Stir in 1/4 cup of sour cream.
