View Full Version : Slow-Roasted Rosemary-and-Garlic Chicken

from the ~Weight Watchers at Home~

You'll need at least a 4-quart slow cooker to cook the whole bird. It also cooks nicely in the larger, oval-shaped cooker. This is really yummy and the rosemary gives the house a wonderful smell when you get home!

10 garlic cloves, minced
2 tablespoons chopped fresh rosemary
6 boneless skinless chicken breasts (4 oz per)
1/2 chicken broth (low sodium)
4 (3-inch) rosemary sprigs
1/2 cup orange juice
1 tablespoon balsamic vinegar

Combine minced garlic and chopped rosemary. Place chicken, breast side down, in an electric slow cooker. Pour chicken broth and 1/4 cup of orange juice into crockpot. Cover with lid; cook on low heat for 7 hours. Remove chicken from slow cooker, reserving drippings.

Place drippings into a small saucepan, strain off any fat. Add the other 1/4 c orange juice and vinegar to saucepan; bring to a boil. Reduce heat; simmer 10 minutes. Yield: 6 servings (serving size: 4 ounces chicken and 1/3 cup sauce).

CALORIES 157 FAT 1.2g PROTEIN 10g

4 points for a 4 oz serving

**** I might add that I just made this in my new crockpot and it seemed like it cooked it too much. Maybe my old crockpot was not as powerful. I think 5 hours would have been plenty for a boneless chicken breast in my new crockpot!****

The original recipe on cooking light actually uses a whole chicken but this is less points and a lot easier than dealing with a whole chicken in my opinion!

I miscalculated the points it should be 4 not the 3 I originally wrote. . . (sorry) I also forget to put the chicken broth in the crockpot . . . (sorry) sheesh I was asleep when I posted this I think!!

Hi, Your recipe sounds delicious and I'm going to try it tomorrow. I've got a Rosemary plant that grows like a weed and chicken already thawed in the fridge. Your recipe must have been heaven sent.

Have you ever put any veggies in with this dish? Any suggestions for a low point side dish?

I have not put vegies in the crockpot with this recipe, partly because I think they absorb some of the fat from the chicken. I personally like my vegies steamed. But if you wanted to try some in the crockpot, I would think carrots or potatoes would work well with this dish. When I make this I usually served this with steamed carrots, (or any other fresh vegie I happen to have) and brown rice along with a green salad.

When do you add the garlic & rosemary? Does it go in the bottom of the pot or get rubbed into the chicken? Or stirred into the broth?

If you use a whole chicken as the original recipe called for you rub it into the chicken. I actually ran the garlic through a garlic press and chopped the rosemary and added it along with the broth and it worked well. I really don't like having to rub stuff into chicken . . .I'd rather just add it to the broth. The chicken is well flavored so it works having it in the broth. But I think either way would work fine!
