View Full Version : Spicy Garbanzo Bean Soup

Taken from Easy Healthy Cooking, serves 6 (1 1/3 cup servings), 3 points each

2 cups frozen diced hash brown potatoes
1 1/2 cups water
2 (5.5oz) cans spicy hot tomato veggie juice (1 11oz can plain veggie juice can be subbed)
1 15 oz can garbanzo beans (chick peas) drained and rinsed
1 4oz can chopped green chilies, drained
1 tsp ground cumin
1/2 tsp garlic salt

1. Combine all ingredients in 3 quart saucepan. Cook over medium high heat, stirring occasionally, until mixture comes to a boil (8-10 mins). Continue cooking until potatoes are fork tender (10-13 mins).
2. Top with shredded cheese and/or cilantro if desired.

Have you tried this and is it good? I'm hoping it is good because I'm not crazy about chick peas but I think if I could get them in the right recipe, I could like them plus I have a can I need to use up.

I've used this several times and I love it http://www.healthdiscovery.net/ubb/smile.gif But I'm a big fan of chick peas too. I'm sure you could use another type of bean in place of the chick peas.

It's soup weather here and this sounds nice and warm. May not use the potatoes in it though.
