I love using pita bread for crust for this recipe.

Garden Pita Pizza (from "Fabulous Fat-Free Cooking http://www.healthdiscovery.net/ubb/smile.gif
Serves 1
3 points

1/3 cup sliced button mushrooms
1/3 cup thinly sliced zucchini
1/8 tsp. garlic powder
1/4 cup tomato sauce
1 fat-free whole wheat or white pita (6")
2 tbl. finely chopped scallions
1 tbl. fresh basil
1/8 tsp. dried oregano
1 large pitted black olive, chopped
2 tbl. shredded fat-free mozzarella cheese
1 tbl. fat-free parmesan cheese

1. Preheat the oven to 425 F.

2. Place the mushrooms and zucchini in a large nonstick skillet. Coat with cooking spray. Cover and cook over medium-high heat for 2-3 minutes. Remove the cover and cook, stirring occasionally, for 1-2 minutes. Stir in the garlic powder and 2 tablespoons of the tomato sauce. Set aside.

3. Place the pita bread on a baking sheet. Bake for 1 minute to crisp. Remove from the oven and spread with the remaining 2 tablespoons tomato sauce. Spoon on the mushroom mixture. Sprinkle with scallions, basil, oregano, olives, mozzarella and parmesan.

4. Bake for 8-10 minutes, or until cheese melts and is golden.

I made my own pita bread in my breadmaker. If you have one, they are great! If you want the recipe for pitas you make by hand, though, let me know..I think I can find it! http://www.healthdiscovery.net/ubb/smile.gif
