This is so yummy I would serve it for guests. They would never know it's low-fat!
Crustless Spinach Quiche - 8 servings, 3 pt each
3 oz. lt. cream cheese
1 C. skim milk
4 eggs worth of egg substitute
1/4 t. pepper
3 C (12 oz) reduced-fat shredded cheddar cheese
1 pkg (10 oz) frozen chopped spinach, thawed and squeezed dry
1 C frozen broccoli, thawed and well-drained
1 small onion, finely chopped
5 fresh mushrooms, sliced
In a mixing bowl beat cream cheese. Add milk, egg substitute and pepper; beat until smooth. Stir in remaining ingredients. Transfer to a 10-in. quich pan coated with nonstick cooking spray. Bake 350 for 45-50 minutes or until a knife inserted near the center comes out clean.
