MARE'S "CHEESY" AND EASY PASTA PRIMAVERA
MARE'S "CHEESY" AND EASY PASTA PRIMAVERA
Serves: 2
1 container light cottage cheese (I use this instead of Fat Free because it is sugar free)
Frozen stir fry vegetables [I get ones with all “0” pt. veggies], thawed (as much as you want, I use a package per person)
1 Tablespoon oil (olive or canola)
garlic powder and onion powder (to your taste)
2 cups cooked pasta (your choice).
While water is boiling, pasta is cooking, spray non-stick skillet with cooking spray. Heat skillet. Add 1 Tablespoon of oil (line the skillet with the oil), heat for a few seconds and then add the vegetables, sprinkle with garlic powder and onion powder [to your taste – we like a lot] and stir fry for between 5-10 mins (depends on how much veggies you have in the skillet). Push the veggies to one side and add container of cottage cheese and heat for a couple of minutes, until it gets all gooey.
To serve:
Put 1 cup of cooked pasta on a plate, put 1/2 cup cottage cheese on top of pasta, then top with the stir fried veggies. (I then mix it all together)
Points per serving:
Pasta = 3 points
Low Fat Cottage cheese = 4 points (Fat Free would be less points)
Veggies = 0 points
oil = 2 points
Total points: 9
Very filling and delicious! Even my husband loves this one (and he's not a cottage cheese fan)!
