Bean soup
1 large onion chopped
1 tbsp olive oil
Saute chopped onion in olive oil for 5 minutes.
Add 10 cups of water and
a 1 pound bag of dried navy beans, rinsed and sorted.
1/2 pound turkey ham diced. Get this at the deli counter and askfor a chunk, not slices.
Bring to a boil, cover and simmer 1 1/2 - 2 hours. Salt and pepper to taste. When done, mash some of the beans with a potato masher to thicken the soup.
Now this is the whole recipe but of course I had to add more to it http://www.healthdiscovery.net/ubb/smile.gif I added chopped celery, carrots and red pepper to it for the last hour of cooking. It was yummy, makes 8 servings, 3 points each.
I also added a bay leaf to it for about half the cooking time.

She calls it Senate Bean Soup, a variation of the soup served in the Senate Dining Room everyday.
